I store the muffins in meal prep containers and freeze. When I want 1-2, I defrost and reheat in the microwave. Chocolate chip and blueberry are delicious. I look forward to trying other toppings too.

Bulgarian MesenitzaI have a friend who taught me how to cook the very popular Bulgarian national dish Mesenitza, it's also called Tutmanik. It is bread stuffed with cheese. The completed Japanese Style Chocolate Roll Cake

Japanese Style Chocolate Roll CakeMy whole family loves this dessert because of its super soft, fluffy cake and very delicious chocolate ganache. For this dessert you need to spend money on 200 g (0.44 lb) of dark chocolate, but this is the only expensive ingredient and it is only used in the ganache. My family has a very humble life, but I think that it is very important to please our loved ones with something very tasty at least 1-2 times a year.

The Stuffed Green Pepper in a bowl.

A bowl of salad with vegan caesar dressing.

Best Vegan Caesar DressingI have quite a few vegan people in my family and circle of close friends. One thing they're all quite picky about is a good vegan dressing. My own personal favourite salad is a Caesar salad, so I wanted to try to make a version I can serve to my vegan mates. This recipe is hands down the best so far. The capers really mimick anchovies, and the hummus makes for a great substitute for the egg base in the original version. Even if you're not vegan, I am sure you will love this version!

Allowing the caramel to cool on the cookies.

Chewy Caramel Apple CookiesI love these cookies because they're kind of like a cross between caramel apples and warm apple pie. The freshly cooked cubes of apple really stand out under the gooey ribbons of caramel. My family enjoys these warm with vanilla ice cream- it tastes just like fresh apple pie a la mode (without the hard work). Give them a try!

A bowl of bite sized energy bars.

No Bake Energy BitesThis recipe was shared on Facebook by a friend. I left off 2 ingredients. It calls for 1/2 cup ground flax seed and 1 Tbsp. chia seed which I probably should not have because I am on blood thinner. I didn't add anything else to the recipe in place of these 2 items and they came out really good. They are even better when they have been in the refrigerator for several days but you need to put them out of sight as they will get gone fast.

A piece of apple cobbler on a plate.

Apple Cobbler (Gluten Free)I had enjoyed apple cobbler most of my life and used the simple recipe that called for a cup of self rising flour, a cup of sugar, a cup of milk and a stick of butter and sliced apples. Since I can no longer have wheat flour, I had to adjust the recipe to make it gluten free by using gluten free flour. It is good and my family loves it too. It also freezes well for later. I freeze it in serving sizes.

Crockpot Peanut DropsChocolate and peanuts in a cup. Great for gifts!

A baking sheet of homemade hot pockets.

Homemade Hot PocketsI got a package of crescent rounds for free, and I also had leftover meatloaf, green beans, onions and sauce. I was very pleased with how these came out. The combinations are endless. This recipe will also work with crescent rolls.

I prepare it first when making recipes that call for cream soup. It takes just a few minutes to prepare and cook.

A container of copycat Good Seasons Italian Dressing Mix

Copycat Good Seasons Italian Dressing MixWhy buy this when you probably have all the ingredients already? I left out the last ingredient, the 2 Tbsp. of salt.

A drawing showing an avocado pear assembled on a plate.

The finished banana cookies.

Flourless Banana Cookies (GF)I keep bananas on hand and sometimes they get too ripe for us to enjoy. I don't throw them out. I either freeze them to use later or make these delicious cookies that are gluten free. They make a great snack especially when you are craving sweets or chocolate.

A cooked placinte on a plate.

Moldovan Placinte with Three FillingsI want to share with you a recipe for a dish that I think many of you will hear for the first time, perhaps as well as about the homeland of this recipe. As a note, I use heaping tablespoon measurements for the garlic, shallots and lemongrass. My husband loves chicken with bones and my kids like boneless so I do half and half for this recipe. If you don't add bones, I would add a tablespoon of Better Than Bouillon chicken broth.

Grandma's Cheats Cheesecake

Grandma's Cheats CheesecakeYou just need a shop bought vanilla cheesecake, 2 bananas, maple syrup, and enough sugar to make some toffee.

A piece of cornbread on a dinner plate.

A stack of pancakes with syrup.

Fluffy Banana Choco Chip PancakeHere's a simple recipe you can even teach your kids to do it for themselves. This doesn't necessarily need measuring since our leavening agents baking soda and baking powder are absent in this recipe. These two are ingredients you have to put correctly into your batter or else you'll have a weird tasting pancake. The other ingredients, they can be estimated so it's safe for your children to participate this activity but still teach them the right estimate and proper procedure to get good results.

Ripe Avocado Salad Dressing
