I'm not a huge fan of the traditional boiled corned beef and veggies, so I make this version where it's boiled, coated in a sauce, then put under the broiler until it caramelizes. It's so good, and so cheap. You can feed several people for a few bucks.
Honey Garlic ChickenI made it in the instant pot. It can alternatively be slow-cooked on high for 3 hours. It can even be pan fried, then add the sauce, and simmer till the chicken is done. It turned out delicious and was done in about half an hour. The instant pot is very quick and pays for itself quickly as you do not have to rely on takeout when time is tight.
Mushroom and Wild Rice Soup (Instant Pot)If you have recently gotten an Instant Pot, you might enjoy making this soup. It was very easy to make and turned out great. This is a vegetarian version but I'm definitely going to make one with beef broth and meat. It would be like a Stroganoff soup. Yum!
