Shredded Wheat Butterscotch CookiesI made this recipe up for two reasons: I love shredded wheat cereal so much, and I really wanted cookies the other day. I didn't have enough flour or butter. These use up finely and coarsely pulsed shredded wheat cereal with an addition of applesauce. The cereal makes them have a wonderful consistency; crisp on the outside, and chewy on the inside. Either you have kids that end up with lots of them, or you have loads leftover from handing them out. My favourite candy has always been Snickers, so these peanut butter cookies are stuffed with them. The outside is a lovely sandy, crumbly cookie, and the middle is gooey and chewy from the baked Snickers. I like them crispy on the outside with chewy middles so I go right in between. Yum!

squirting cookies of Vegan Meringue

Vegan Meringue CookiesAquafaba is the fancy name for the juice, or brine, to come out of a jar of beans. You know, the stuff that everyone throws away. baked cookies on plate

Flourless Almond Butter Chocolate Oatmeal CookiesI made these specifically for my friend with a peanut allergy, and loves them to bits. If you'd like this to be truly gluten free, use gluten-free oats. Most standard oats are processed in places that handle wheat, so be sure the packaging reads that it is gluten-free. Chocolate Chip Oatmeal Cookies on tray

Crispy-Edged Chewy Chocolate Chip Oatmeal CookiesMy friends and I were having a discussion about cookies. Everyone agreed oatmeal was better than plain, chocolate chips were better than raisins, but half liked chewy while the other half liked crispy. As this debate was going on, I came up with a cookie combination to make everyone happy. I actually prefer chewy, but when I tried my cookies, I was immediately fond of the crispy edges. What a surprise. Everyone loved these!

baked banana uncut bars

Chewy Banana BarsLiving in Kentucky the markets are flooded a few times a year with bananas. My husband seems to go crazy and buys up half the store when he goes shopping alone. I have bananas coming out my ears. There are only so many bananas that you can eat before you just can't eat another one. Furthermore, during the summer the bananas get ripe, so quickly, I have no idea what to do. I've made banana fudge, banana jam, banana cakes, banana bread, frozen bananas and banana cookies.

Peanut Butter Cookie Cups on plate

Peanut Butter Cookie CupsI made these for a friend who is infatuated with peanut butter cups. The cookie part of it is soft but holds together beautifully with the peanut butter cup stuffed inside. Avocado Banana Chocolate Brownies on plate

Avocado Banana Chocolate BrowniesI actually call these my Skinny Mini Brownies, but I wanted to be very clear in the title what's in them. It's truly just one avocado, one banana, and a box of chocolate brownie mix. This process knocks out the need to use butters and oils, and makes the brownies so fudgy, you will not need icing at all. Here, I've used an organic double chocolate brownie mix I got on sale for 60 cents. You could also use 2 avocados, omitting the banana, and they turn out fabulously, as well!

Peanut Butter Cereal Cookies on plate

Peanut Butter Cereal CookiesIt's been a longtime pattern in our house that we end up having a quarter of a bag of each kind of cereal sitting in the cupboards. Perhaps we get bored of them after a while, I'm not quite sure. I've found a great way to get more use out of them when they're being ignored is to turn them into cookies. Here, I've used the last of my raisin bran and crispy rice cereals to make peanut butter cookies. They are light, flakey, and hard to resist!

stack of Tangerine Lime Bars

Tangerine Lime BarsThere are two reasons why I've made these scrumptious tangerine lime bars. First off, I love tangerine and lime flavours so much, I think they need to be stars of more foods. Secondly, my tangerine and lime trees really outdid my lemon tree this year, so when I went to pick fruit in my garden, this was the best idea for a sweet treat! This a very simplified recipe, so there is no egg separating or tempering necessary. The flavours aren't as tart as lemon bars, they're well rounded and velvety. I hope you give these a try. :)

Pretzel Cookies on plate

Butterscotch Chocolate Pretzel CookiesI get frustrated when I'm at the bottom of the pretzel bag and all that's left are little broken pieces. Here I've used the bits inside a sweet cookie, topped with sea salt. The cookie itself is soft and chewy, and the pretzels give it a lovely crunchy texture. The salt offsets the sweet from the butterscotch and chocolate chips, making this a wonderful all-in-one treat!

Chocolate Chip Cookies on plate

Mom's Best Chocolate Chip CookiesThese cookies are so good it's hard to find words to describe them! They're not too gooey, not to crisp, not too sweet... just right. My mother tweaked the recipe from a Martha Stewart magazine, adding a tablespoon of vanilla and playing with the measurements until it was both practical and perfect! I like to save making them for a cold winter day, and to eat a couple while they're still warm from the oven. But they taste great any time!

These Mango Lime Bars are a lot like Lemon Bars, but less gooey, more pillowy, and of course, more mango-y! The base is a butter shortbread that will melt in your mouth, but still hold up the custardy topping. You will love these. If you prefer super tart, go with two limes instead of one; the consistency will still hold up.

Flourless Peanut Butter Cookies

Flourless Peanut Butter CookiesI first had these at my Aunt's house years ago. They were incredible! I immediately asked her to write down the recipe. She said "no". I just had to share this with everyone.

Two Ingredient Coconut Banana Cookies

Two Ingredient Coconut Banana CookiesI love these little cookies! They only have two ingredients, shredded coconut and banana. They turn out like a cross between banana bread and coconut macaroons. These are a great option for those who are vegan or gluten-free.

Cookie Dough Topped Brownies

Cookie Dough Topped BrowniesMy husband is a huge cookie dough fan. I don't let him eat actual cookie dough because I'm squeamish about raw eggs. Chocolate Orange Fudge Brownies

Chocolate Orange Fudge BrowniesMy husband and I are huge fans of Terry's Chocolate Oranges, the orange shaped chocolate balls that have a yummy hint of orange. Chocolate Holiday Oat Loaf

Chocolate Holiday Oat LoafSince I have about 6 hours between breakfast and lunch, a dietitian recommended that I have a Kind bar to tide me over. They are expensive and have a lot of calories and carbs. When I saw this recipe in the Penzey's catalog, I showed it to her, and she said it was good. It tastes great, and has 130 calories per slice instead of 200 per bar. The carbs are 19 grams compared to 22 or more per bar. They also cost a lot less than commercially prepared bars. If pumpkin is hard to find, you can substitute canned yams. Of course, this can be made for its original purpose, dessert!
