It calls for 2 pounds of baby carrots but I cut the recipe in half and only prepare 1 pound when I cook them. This is not Cracker Barrel's recipe but it sure does taste pretty close and it's good.

Vegetables FrittersI had some odds and ends of vegetables to use up, so I improvised a recipe I found online to make these vegetable fritters with a sour cream topping.

We wanted home fries for breakfast, but I didn't have enough potatoes for a whole batch. I used one potato, one sweet potato, some onion, and spinach. You can also pulse them in a food processor and use them in cakes, smoothies and breads. My local shop had carrots on sale for 29 cents per pound so I had to fill up!
