Preheat oven to 375 degrees F.
Sauté garlic in olive oil until garlic is fragrant, about one minute.
Mix sautéed garlic, spinach, cream cheese, dressing, and eggs in large bowl until well blended, stir in half of the cheese and half of the crackers.
Spoon into a lightly oiled 8 x 8 baking dish, top with remaining crackers and cheese, top all with tomatoes and bake until heated through and cheese is melted, about 20 to 25 minutes.

Cook spinach and drain thoroughly. Saute' onions in margarine. Mix remaining ingredients. Fold into ingredients spinach and onion.
Put egg in bottom of bowl and beat with fork. Add mayonnaise and blend. Add soup and milk. Cook spinach and drain but leave in pan.
Thoroughly combine all ingredients in mixing bowl. Pour into greased crockpot.
Thaw and drain spinach. Mix the sour cream with soup mix; blend well.
Cook spinach and drain well. After spinach is cool put on the bottom of a 9x13 inch casserole dish.
