BLACK FOREST PARFAITS

cherry pie filling
chocolate cake crumbs
whipped cream
chocolate sprinkles
maraschino cherries for garnish

In parfait glasses, layer ingredients in the following order: pie filling, cake, pie filling, whipped cream, sprinkles, cherry.

You can make this with any pie filling and any cake. In America the combination of cherries, chocolate, and cream(or vanilla) is usually called "Black Forest" -- don't know why.

One idea is a take on the Scottish Broken Biscuit Cake. Instead of using biscuit (cookie) crumbs, you could try using the cake crumbs. I would wait until they are stale to make this:

One pound plain chocolate
One pound of butter or firm margarine
One pound broken mixed biscuits (or cake crumbs)
Half pound chopped mixed roasted nuts
One teaspoon vanilla a essence (extract)

Melt the butter and chocolate together and stir. Mix in the well broken biscuits, nuts and essence/extract and pour into a 10" by 15" baking tin, lined with greaseproof paper (vegetable parchment). Smooth to a level top and leave it to set. Cut into fingers (literally a finger thick).

Good Luck!

Stale cake makes great trifle. Just slice up your cake, pile on a dish, and leave it to soak for a couple of hours in either some kind of sweet alcohol like cointreau, sweet sherry, or port OR fruit juice OR strong coffee with sugar.
