Stuffed Mushrooms on plateThese stuffed mushrooms make a great appetizer or side dish. They are quick to put together, but taste like you really took your time on them. I made these in my toaster oven.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 12 stuffed mushrooms

Ingredients:

  • 12 large mushrooms, stems separated and finely chopped
  • 1/2 medium onion, finely chopped
  • 1 Tbsp fresh basil, finely chopped
  • 2 Tbsp mayonnaise
  • 2 Tbsp grated Parmesan cheese
  • 1 tsp garlic powder
  • salt and pepper to taste

Steps:

  1. Preheat oven to 350F. In a bowl, mix together the chopped mushroom stems, onion, basil, mayonnaise, and 1 tablespoon of the Parmesan cheese. Add salt and pepper to taste.

  3. Fill each mushroom cap with some of the mixture.

  5. Place on a baking sheet and top with remaining Parmesan cheese. Bake for about 20 minutes until golden brown.

For a speedy cleaning of mushrooms to prepare them for stuffing use a melon ball scooper. It removes the stems and scoops out the fins of the mushrooms very quickly and cleanly.

Preheat oven to 350 degrees F. Lightly grease a baking sheet or line with aluminum foil or parchment paper. In a medium bowl; combine cooked rice, sun-dried tomato pesto, thyme and pepper.

Remove mushroom stems and chop finely . Saute' chopped mushrooms and onions lightly in skillet in small amount of oil. Add bread cubes, garlic salt and lemon juice, tossing to mix.

Remove stems from mushrooms. Marinate caps for 1 hour in soy sauce. Chop stems finely. Combine stems with remaining ingredients in bowl, mixing well.

Red Lobster Crab Stuffed Mushrooms

35 min 20 min prep
6-8 Minutes

1 lb fresh mushrooms
1/4 cup celery, finely chopped
2 tablespoons onions, finely chopped
2 tablespoons red bell peppers, finely chopped
1/2 lb crabmeat
2 cups oyster crackers, crushed
1/2 cup cheddar cheese, shredded
1/4 teaspoon garlic powder

1/2 teaspoon Old Bay Seasoning
1/4 teaspoon black pepper, ground
1/4 teaspoon salt
1 egg
1/2 cup water
6 slices white cheddar cheese

Preheat oven to 400deg F.
Wash mushrooms and remove stems.
Set caps aside, and chop half of the stems.
Saute chopped mushroom stems,celery, onion and pepper in butter for 2 minutes.
Transfer to a plate and cool in refrigerator.
Combine sauteed vegetables and all other ingredients (except cheese slices) and mix well.
Place mushroom caps in a sprayed or buttered baking pan stem side up.
Spoon 1 tsp stuffing into each mushroom cap.
Cover with a piece of sliced cheese.
Bake for 12-15 minutes until cheese is lightly brown.

In Tucson, Arizona I bought a package of stuffed portobellos. I don't know if they used hamburger or sausage, but oh they were good!
Can anyone help me out?

To my recollection, they are stuff with breadcrumbs and Italian sausage broken up small, and removed from casings, also a bit of parmesan cheese.

Start with jumbo mushroom caps, grill them for couple minutes.
Herb spreadable cheese (like a gourmet spread)
Panko (chinese) breadcrumbs, grated parmesan, provolone and a white fondue type sauce (to mimic their pre-made sauce).

Put the White Fondue Cheese sauce on bottom of dish. Stuff the mushrooms with the Herb Cheese, top that with the panko breadcrumbs that have been mixed with the parmesan, top off with provolone and broil till melted.
