Total Time: 5 minutes

Source: From a Kids recope book!

Ingredients:

  • 2/3 cup flour
  • 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 1/2 cup milk
  • 1 cup kernel corn, drained

Steps:

  1. Sift together: flour, baking powder, salt, and pepper in a bowl.
  2. In another bowl, mix together egg and milk.
  3. Take your flour bowl and make a hole in the center. Gradually add the egg mixture; stirring constantly. Then add the corn and mix well.
  4. Grease your frying pan or griddle. Heat to medium. Drop batter by 2 teaspoons full. Fry until golden brown, and turn once. Keep warm in 170 degree F oven until ready to serve!

Recipe for Golden Corn Fritters. Combine egg and 2 Tbsp. milk. Stir in flour and salt. Stir in corn and enough remaining milk to make a fairly thin batter. . .

Original Recipe
Yield 1 dozen fritters
Ingredients:

3 cups oil for frying
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

1/4 teaspoon white sugar
1 egg, lightly beaten
1/2 cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn, drained

Directions:
Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
In a medium bowl, combine flour, baking powder, salt and sugar.
Beat together egg, milk, and melted shortening; stir into flour mixture.
Mix in the corn kernels. Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels. Good luck.

My English Grandma's recipe for cream style corn fritters, which my Irish husband says is as good as his mothers.

1/4 c flour
1 tsp baking powder

1/4 tsp sale
2 eggs
1 small can cream style corn (8oz)

Beat eggs light and fluffy.
Stir in corn and dry ingredients.

Cook like pancakes.
