Ingredients:

  • 1/2 cup canned black-eyed peas, rinsed and well-drained
  • 1/4 cup jarred mixed giardiniera, mild or hot, drained and finely chopped
  • 2 Tbsp real bacon bits
  • 3 Tbsp bottled red wine vinaigrette
  • 1 box Athens mini fillo shells (15 count)

Steps:

  1. In a small bowl, mix together black-eyed peas, chopped giardiniera, bacon bits and red wine vinaigrette.
  2. Spoon into fillo shells, dividing equally among them.
