Blueberry PancakesIt was quick, cheap and wonderful!

Ingredients:

*Add enough to make batter thin enough to make pancake batter. For waffle batter, don't add so much liquid

Directions:

Mix all ingredients together and fry the pancakes. If you want waffles, pour batter into waffle iron!

Source: Just experimenting and trying to please a well deserving husband!

This is a good hint. Another way is to mix up the basic fruit muffin mix in the processor (with fat but not with fruit, liquid and egg) store in bags in the fridge, then make up different kinds as you want them. Not quite as quick, but if you make up a few and have them ready to go it's almost as quick as a mix. I hadn't thought about muffin mix as waffle mix. Glad to have this idea and will pass it on. Thanks.

Pancakes are so easy to manipulate into shapes to teach with, so we are going to start doing plates of multiplication equations. Maybe one or two a week. I am hoping it will help.

This recipe has vinegar instead of baking soda and also has condensed milk in it because I accidentally opened a can. I turned the condensed milk into buttermilk with the vinegar, plus the vinegar makes it fluffy.

These make a great, light, fluffy pancake! Beat 3 egg yolks with rotary beater. Beat in buttermilk and soda well.

This is such a fun pancake idea for kids (and grown-ups too). Stir together the first five ingredients in a mixing bowl. Pour milk into a separate bowl; beat the egg and add it to the milk.

Fry bacon in skillet. Do not empty grease. Whip first two ingredients together. Stir in remaining ingredients.

Pour batter into skillet. Skillet should be large and ovenproof. Batter should be 1/2-3/4 inches deep.

Blend buttermilk, egg yolks, and margarine in bowl. Sift dry ingredients except sugar slowly into milk mixture, mixing well.

Beat egg whites, adding sugar slowly, until stiff. Fold gently into batter.

I use a large empty catsup bottle or any squirt/squeeze bottle with a screw on lid for pancakes or funnel cakes. Just put the ingredients in and the bottle shake, you can mix right in the bottle. Then squeeze out designer pancakes. If you have leftovers you can even store the batterin the squirt bottle for another day.

Sift dry ingredients together. Add eggs, buttermilk and sour cream. Beat until blended. Stir in melted butter. Cook on greased griddle.

Melt butter in 10 or 12 inch skillet or 9x13 inch glass baking dish. Turn to let butter coat sides. With fork mix eggs, milk, flour, salt and nutmeg.

Pour batter into skillet or baking dish and bake at 425 degrees F for 15-20 minutes or until puffed and golden.
