Cherry Chocolate DelightThis is a quick, easy, tasty dessert. This would be a great make ahead dessert for company when you're short on time. It also looks pretty! Make sure you serve it in a clear glass cup/wine glass so that you can see all the layers.

When I gave my little girl her dessert, she just happened to have on a matching shirt. Not only did she get a kick out of that, but she ate every bite! :)

Total Time: About 10 minutes assembling time.

Yield: About 6 large servings

Ingredients:

  • 1 3.4 oz. package instant chocolate pudding
  • 1 8 oz. container Cool Whip, softened
  • 1 21 oz. can cherry pie filling
  • Chopped chocolate chips for garnish

Steps:

  1. Prepare your pudding according to package directions. Leave in fridge, covered, until it is thoroughly set and chilled.
  2. Gather your glasses, clear will be best. You want to be able to see all your pretty layers. A wine glass would be great too!

    Using a long skinny spoon, start by layering your ingredients. Be careful not to get your yummy goodness on the sides of your glass. You want all layers neat and pretty. Pudding, cherries, Cool Whip. Repeat once more and top with chocolate chips.

I was going to add crushed Oreos as one of my layers, but my kids ate all the Oreos! It was still good without them. :)

Cream butter; add powdered sugar and cocoa. Add well beaten egg yolks and fold in stiffly beaten whites. Add vanilla and nuts. Place vanilla wafer crumbs in bottom of 8 cupcake pans and fill with mixture.

Reserve 1/4 cup cookie crumbs. Combine remaining cookie crumbs with margarine in large bowl and mix well. Press over bottom of 9x13 inch dish. Chill for 10-15 minutes.

Blend flour, melted margarine, and nuts. Pat into 9x13 inch Pyrex pan. Bake 20 minutes at 350 degrees F.
