Cuban Cornish Game Hens on plateThis is a nice twist on roasted hens featuring lovely flavours from Cuba! The hens will sit in the marinade for about 4 hours, infusing the awesome spices and making the meat super tender. Baking them on a bed of sliced onions also provides great flavour, and makes a great onion topping once finished. I love these hens alongside roasted veggies and rice. Enjoy!

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour 20 minutes plus marinating time

Yield: 2 large servings

Ingredients:

  • 1/3 cup olive oil
  • 4 cloves minced garlic
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • juice of 3 large lemons
  • 1 large onion, peeled and sliced
  • salt and pepper
  • 3 Tbsp chopped cilantro for garnish

Steps:

  1. In a large bowl, add olive oil and minced garlic. Use a fork to crush garlic to permeate the oil with its juices.

  3. Mix in oregano, cumin, and 1 teaspoon salt. Squeeze in the juice of 3 lemons.

  5. Place hens inside a big resealable plastic bag, then pour in the marinade. Get all the air out and seal it. Allow to marinate for at least 4 hours.

  7. Preheat oven to 425 F. Grease a baking sheet and add sliced onions. Season with a bit of salt and pepper.

  9. Place hens on top of the bed of onions and sprinkle with some pepper. Roast in preheated oven for 30 minutes. Reduce heat to 375 F, then roast an additional 20 to 30 minutes, until internal temperature registers at 165 F.

  11. Use a wooden spoon to scrape up roasted onions and place on top of hens. Sprinkle with chopped cilantro.

Is it feasible to cook one Cornish game hen in a small crock pot? I've decided to be alone with my 4 pups, for Thanksgiving and Christmas dinners. I'm just not interested in cooking a turkey or chicken either time. Thanks so much.

Yes, it is feasible. Try googling "crock pot Cornish game hen recipes for one" as your search term. I got a lot of recipes doing this.

I guess it's feasible, but they only take 60 mins. or so to cook in the oven & come out so good--just baste frequently w/butter or oil for a nice crispy skin.

Pick out a nice big hen.
Cut up about three potatoes and cube them into the pot too.
One small diced onion, and some green pepper if you want it.
Garlic salt, celery salt, and some sage or poultry seasoning to your liking.
One small can of diced tomatoes.
And lastly, three good pats of butter or margarine.
Cook till the taters are done and yummy!!

I would do it. Put potatoes onions carrots celery & being a apple person I wold put them in there too.Yum

This is a great recipe if you're busy and want a delicious meal with the help of an air fryer. Have a rotisserie cornish hen ready in 35-40 minutes!

This is my first time but you can actually fit 2 hens (but I tried 1 to see how it would turn out) and it's a hit!

I love serving Cornish game hens because each person can have their own, with all the cuts. The meat and veggies are all cooked in the same pan and lend flavours to each other. The wild rice is boosted by the great texture of almonds and walnuts, while sweetened and softened by chopped dates. I consider this the best date-night meal!
