A delicious way to use up some fresh apples and rhubarb while in season!
Preheat the oven to 375 degrees F.
Place the rhubarb and apples into a pan on medium heat, with the 1/4 cup sugar, butter, vanilla and cornstarch for about 5 minutes. Transfer to baking dish.
To make the crumble topping, place the flour and baking powder in a bowl and rub in the cold butter until it looks like soft crumbs.
Stir in the sugars and spread evenly over the fruit, bake for 35-45 minutes.
