Edamame (tender soybeans with a slightly Lima bean flavor) are quickly becoming a new favorite of mine because they are so versatile. They pair really well with the peppery flavor of arugula!
Cook edamame according to package directions, drain and let cool.
Whisk vinegar, honey, and oil together in a small bowl and season with salt and pepper.
Toss arugula and edamame in a serving bowl, add cheese, drizzle with dressing, toss again, and serve.

Edamame is a delicious young soybean, often eaten straight out of the pods. You can find them in the frozen section of any grocery store, in the pod or shelled. I prefer to eat them from the pod; I find it more fun and much more tasty.
