Super fast and easy when guest surprise it takes a very short time to make and impress them
Reheat the oven 375 degrees F.
Beat the 3 eggs (no need to separate the whites from the yolks), add the sugar and beat till dissolves about 1 minute add the flour in two batches.
Put parchment paper in baking dish 9x13 inch and grease.
Pour the better and put in the oven in the middle of the oven for about 15-20 minutes till it's light golden.
Let few minutes to cool so you can handle the cake.
Meanwhile reheat the apricot preserve in the microwave for 10 seconds for a better spread on the cake.
You can spread the preserve and roll the cake and than spread powder sugar, or just cut the cake in half (2 equal parts) put the preserve on one half of the cake cover with the second half of the cake and spread the powder sugar.
Enjoy!

I am looking for a peanut sponge cake recipe. It has crushed peanuts on the butter cream frosting.

This looks like the one you are looking for:
My grandmother made a sponge cake and the frosting was butter and then covered with crushed peanuts.
It sounds simple enough, but I do not know if she used salted or unsalted butter. The peanuts I am sure were roasted in the shell. Has anyone heard of this?

If the peanuts were roasted in the shell they would not be salted. However, with everyone using 'salted caramel' flavours, you may want to try the salted ones.
