Easy Salmon Fettuccini on plateI served this as a quick but delicious lunch!

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 3 servings

Ingredients:

  • 1 5 oz can Pink Salmon Steaks (in tuna fish aisle)
  • 1/3 cup olive oil
  • 3 cloves garlic
  • 1/4 cup parsley
  • salt and pepper to taste
  • 3/4 cup broth (I used beef)
  • 1/8 tsp cayenne pepper
  • 1/3 lb fettuccine noodles

Steps:

  1. Start boiling water for your fettuccine. Add the noodles once it's boiling.

  3. Mince your 3 cloves while you heat 1/3 cup of olive oil in a pan.

  5. Add minced garlic to the pan, and cook lightly about one minute. Don't brown.

  7. Add the salmon to the pan. Sprinkle with salt and cayenne pepper.

  9. Mince 1/4 cup parsley and add it to the pan. Stir to warm up mixture for 3 minutes.

  13. Drain the fettuccine and serve the salmon poured on top of the noodles. We ate it all right up and it was really a good lunch!

Drain liquid from salmon into measuring cup. Set aside to use as part of liquid. Turn salmon into bowl and flake. Add minced onion, seasonings, milk and reserved salmon liquid. Mix lightly.

Heat oven to 325 degrees F. Cook noodles as directred on package; drain. Mix noodles, cottage cheese, sour cream, onion, garlic, Worcestershire sauce, red pepper sauce, salt and salmon.

Break salmon into bits with a fork, removing skin and backbone. Sprinkle with lemon juice and combine with other ingredients. Arrange in lettuce cups and garnish with tomato wedges.
