My friends and I were having a discussion about cookies. Everyone agreed oatmeal was better than plain, chocolate chips were better than raisins, but half liked chewy while the other half liked crispy. As this debate was going on, I came up with a cookie combination to make everyone happy. I actually prefer chewy, but when I tried my cookies, I was immediately fond of the crispy edges. What a surprise. Everyone loved these!
If you store these cookies in an airtight container, they will end up all chewy. Leave them out to keep them crispy-edged. :)

Cream the shortening, brown sugar and sugar together and add the eggs. Dissolve the baking soda in hot water, and add the salt and vanilla.
In a large mixing bowl, cream butter and sugars. Beat in eggs and vanilla. Combine the oats, flour, pudding mix, baking soda and salt; gradually add to creamed mixture.
