Ingredients

  • 6 celery ribs, chopped
  • 1 large onion, chopped
  • 1 medium sweet red pepper, chopped
  • 1/4 cup butter, cubed
  • 3 cans diced tomatoes, undrained (14oz. each)

  • 1 Tbsp. tomato paste
  • 3/4 cup loosely packed basil leaves, coarsely chopped
  • 3 tsp. sugar
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 cups heavy whipping cream

Directions

In a large saucepan, saute' the celery, onion and red pepper in butter for 5-6 minutes or until tender. Add tomatoes and tomato paste. Bring to a boil. Reduce heat; cover and simmer for 40 minutes. Remove from the heat. Stir in the basil, sugar, salt and pepper; cool slightly. Transfer half of the soup mixture to a blender. While processing, gradually add cream; process until pureed. Return to the pan; heat through (do not boil.)

Place tomatoes cut side down in a greased 15x10 inch baking pan. Brush with 3 Tbsp. oil.combine garlic, salt, basil, oregano, and pepper; sprinkle over tomatoes.

We love the tomato basil bisque (Signature Brand) that they sell at Safeway grocery stores. I've tried to duplicate it but I'm not close yet.

Does anybody have a recipe for this? By the way, exactly what is bisque?

Bisque simply means a thick cream soup ...

Have never tried to make a bisque soup myself but did find this recipe that sounds really yummy!!!

Tomato Basil Bisque

Serves 4

1 1/2 tablespoon butter
1/2 large yellow onion
1/4 rib celery
1 1/2 tablespoon flour
1/2 tablespoon minced garlic
1 can (16-ounce size) diced tomatoes
1 tablespoon chopped fresh basil
1 can (16-ounce size) tomato puree
1/2 can (16-ounce size) beef stock
1/4 cup heavy whipping cream
1/2 bay leaf
Salt and pepper to taste

Heat butter in a large stockpot. Dice onion and celery and add to pot. Saute until the onion is transparent. Sprinkle flour over onions one tablespoon at a time, stirring in each one thoroughly with a large spoon until paste forms. Add garlic, diced tomatoes and basil, and stir. Stir in tomato puree and beef stock slowly, then whipping cream. The soup should be a rose color. Add bay leaf and simmer on low for about an hour. Remove bay leaf before serving. Season to taste with salt and pepper.

Hello, you are absolutely right! The soup is wonderful. Sometimes they have a good sale on it during the winter months. My family just loves it.

Did you know that it freezes really well. I have done that and it is still great after a few months in the freezer.

Bisque... well... it has cream in it or milk.

a nice tomato bisque can be made simply by adding a can of milk or fat free half and half in place of the water when you make a can of tomato soup.

Add a little fresh minced basil if you like...
sometimes I also add a small can of slices stewed tomatoes. wonderful with toast!

From what I read, this tastes just the same... but if you dont care about the fat or calories, then use cream instead of the half & half (safeway/vons uses cream).

I love the tomato basil bisque at Safeway. I used this recipe, but it wasn't quite right. So I added 1/2 block of cream cheese. It was perfect.

How can this be correct, look on label of soup and totally different! than this recipe. It does not taste the same either grrrr, Kim

I doubt a fast food chain is going to give up a secret recipe but here's a most excellent and yummy sounding Tomato Bisque recipe for you to try ;-)

Tomato Bisque

1 1/2 tbls butter
1/2 large yellow onion, diced

1 1/2 large fresh tomatoes, diced
1 tbls chopped fresh basil
1 16-ounce can tomato puree
1 8 oz can chicken stock
1/4 cup heavy whipping cream
Salt and pepper to taste

Heat butter in a large stockpot.
Add onion and celery and sauté until the onion is transparent.
Evenly sprinkle flour over onions and celery and stir thoroughly until a paste forms.
Add garlic, diced tomatoes, basil and stir.
Stir in tomato puree and chicken stock and then stir in whipping cream.
Simmer on low for about an hour.
If desired, season to taste with salt and pepper.

Jessie Cates Restaurant~Tomato Soup
( As given to me. 1997
On the day they closed after 15 years)

3 pot batch
1 pound butter

18 oz. fresh bell peppers
12 oz. I.Q.F. onions
1 pound chopped celery- cooked and drained seperately
3 cans tomato soup
6 cans stewed tomatoes
9 oz. brown sugar
1 teaspoon pepper
2Tablespoons salt
1- 1/2 teaspoons bayleaves
1- 1/2 teaspoons basil
1 Tablespoon celery salt
10 oz. Col - Flo (? Cauliflower ? )
2 # water ( ? ) 2 pounds of water?)
Blend and add together

The Loop's Tomato Parmesan Bisque


Yield: 8 servings

Michael Stern



1 medium size onion, finely chopped

2 tablespoons olive oil

2 ounces finely chopped cooked bacon

1 teaspoon minced fresh garlic

3/4 cup tomato puree

14 ounces ground tomatoes

2 (10-ounce) cans undiluted chicken stock

1/2 cup all-purpose flour mixed with 3/4 cup water


2 cups whipping cream

1 teaspoon finely chopped fresh thyme

1 teaspoon finely chopped fresh oregano

4 tablespoons freshly grated Parmesan cheese

1. Saute onions in olive oil. Add bacon and garlic. Let cook until onion is tender. Cool mixture. Puree mixture in the work bowl of a food processor.

2. In a stockpot, add pureed bacon mixture, tomato puree and ground tomatoes. Add chicken stock. Stir well. Add flour mixture. Whisk to combine and bring to a boil.

3. Remove from heat and add whipping cream. Add thyme, oregano and Parmesan.

Folks in here don't know how good The Loop's Tomato Bisque is probably, lol. It's not fast food either btw. Would love to be able to recreate it at home myself.
