Gluten Free Bread (Bread Machine)
Mix together with a whisk:
1 cup brown rice flour
2 cups white rice flour
1 1/3 cup powdered milk
1/4 cup plus 2 teaspoons sugar
1 1/2 teaspoons salt
3 1/2 teaspoons xanthan gum
1 package dry yeast
In another bowl whisk together:
2 eggs
1/4 cup oil
1 teaspoon vinegar
Gradually stir in:
1 3/4 cup warm water
Pour the liquid ingredients into the bread machine, then add the dry ingredients.
I do not have a gluten setting on my breadman. I require assistance in how to operate please?
I just use light crust on my machine
Does this make a 1 1/2 or a 2 pound loaf? My machine makes the 1 1/2 pound.
What can I use instead of the powdered milk to make it dairy free? Thanks.

Use the quick bread setting if you dont have a gluten free setting.
You can use the basic setting.

Isn't 8 cups of potato starch too much? This is from the recipe based on the book: Gluten-Free Quick and Easy by Carol Fenster, PH.D.
