I remember my mother baking her special Banana Chocolate Chip cookies. Before baking she would roll the circles of dough into crushed corn flakes, sugar and cinnamon. The cookies were cake like and kept for a long time because they were sealed in that sugar mixture. Does anyone have a recipe like this? I have looked all over and I found a lot of good cookie recipes, but not this one that I am hoping to find.
So far, I'm not finding these...but I've got the people at yahoo answers looking for ya too. :)
the closest so far isn't chocolate chip, but butterscotch:
Ingredients:
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 dashes nutmeg
1 cup sugar
1/2 cup butter
2 eggs
1 cup ripe bananas
1/2 teaspoon banana flavoring
1 1/2 cups oatmeal
1/2 cup chopped walnuts
1 bag butterscotch chips
Steps:
1. Mix dry ingedients together set aside.
2. Cream sugar and butter, add eggs mixing in well, stir in bananas and flavoring, add dry ingredients and oatmeal fold in nuts and chips (The dough may seem a little sticky and you may be tempted to add more flour, but first try baking off a few. Found that adding more flour made them dry after baking, the oatmeal seems to swell some during the baking process).
3. Drop onto lightly greased baking sheet, bake at 375' 10-12 minutes.
