Freezing Zucchini Bread?

I am baking small individual loaves of zucchini bread today for Christmas gifts, that's 5 days away. Can I freeze in the aluminum pans they are baked in? I will be traveling 8 hrs in 2 days also so they will have to be in a cooler. Can anyone tell me the best way to keep them fresh?

I would first wrap air tight with foil,then placed in freezer bags making sure you press all the air from the bag before zip/seal. This will keep all the goodness of your bread to remain fresh tasting !

I would suggest taking them out of the pans they were baked in and only wrapping them in aluminum foil and using a zip lock storage bag to freeze them. The way when they defrost the pain that they were baked in does not make the bread soggy.

I never liked to freeze the bread like this in the pans I baked them in.

From past experience, I agree with those who say remove the bread from the pan before freezing it. Wrap it tightly with heavy duty foil. Placing the wrapped loaf in a freezer bag can enable it to be stored in the freezer for a longer period of time and still taste delicious when its thawed. The freezer bag can serve as an extra layer of protection when the bread is packed into the cooler.

Yes, absolutely! This is one of the best ways to use zucchini for the winter months or until the next zucchini season. I do what Mrs. Story's mom does: bake it, cool it, wrap in foil and pop into a large ziplock baggie or if you have one, use your vacuum food-sealer.

It's wonderful to thaw out a loaf in the middle of winter for a quick, ready-made treat or as a gift for someone. :)

Before freezing the zucchini bread, I use an electric knife to slice the bread. That way it is ready to serve almost immediately out of the freezer. I don't have a vacuum food sealer, so after placing the wrapped bread inside a plastic bag, I remove as much air as possible and then close the ziploc bag except for a small opening where I stick in a drinking straw. I do my own vacuum sealing by sucking air through the straw and when the bag is tight around the bread I pull the straw out while sealing the bag.
