Recipes Using Cake Mixes

Cake Mix in Bowl With WiskI've come into about 80 boxes of cake mixes, mostly chocolate, a few white and a few yellow. I would welcome any ideas for these cake mixes besides the obvious. I had a great recipe for brownies using cake mix, but I lost it.

They were delicious! I imagine they could be used for cookies, etc. but I am not an accomplished baker and really need some tips. Thanks ahead, and I will be anxiously waiting for your ideas and hints.

I love using cake mixes for cookies! The basics are as follows:
1 cake mix
1-2 eggs
2 Tbls oil
1/4 cup water
Additions (choc. chips, peanut btr., etc)
Bake for 10 min. at 375.

You can also go to recipegoldmine(dot)com and look at their section for cake mix recipes. My favorite is Easy Lemon Bars. YUMMY!

Here's two I've used for years:

Chewy Cookies
cake mix - your choice
2 eggs
1/3 c. oil
1/4 c. flour
Stir together to form dough. Spoon out onto cookie sheets. Bake at 350, 10-12 mins. Use your imagination to add nuts, coconut, chocolate chips, etc.

Easy Cookies
1 chocolate cake mix
1 large egg
1/2 (8 oz) container cool whip or other whipped topping
1 c. chopped pecans or other nuts
powdered sugar
Combine the first three ingredients - stir well (batter will be sticky). Stir in nuts. Dust hands with powdered sugar and shape dough into small balls. Roll in powdered sugar and put 2 " apart on ungreased sheet. Bake at 350 for 10-12 minutes. Cool on wire racks.
BTW where did you get so many cake mixes?

Wow, with that many cake mixes, it would pay you to get this book "The Cake Doctor" by Anne Byrn. It contains 150 recipes that use cake mixes. The ones I have tried are all excellent. Do you think you will get them used up by expiration date?

This is my favorite recipe using cake mix and it freezes beautifully.

Pumpkin pie cake

1 can pumpkin (29 oz)
4 eggs
1 can evaporated milk (12 oz)

1 1/2 cup sugar
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 package yellow cake mix
1 c. melted margarine
1 c. chopped nuts
Direction
beat all ingredients except cake mix, margarine and nuts.
Pour in a 9 x 13 pan sprinkle dry cake mix over pumpkin mixture. Pour melted margarine over cake mix and sprinkle with chopped nuts
Bake at 350 degrees for 1 hour no longer. Top with whipped cream if desired.

And if you get tired of cake and cookies- make dessert waffles. Just mix up the cake batter as it calls for on the box and pour into a waffle iron. Top the cake waffles with fresh fruit (raspberries with chocolate cake is lovely) and ice cream or whipped cream. Fast, delicious, ... what more could you ask for in a dessert?

Easiest Cake Ever

just 4 ingredients

1 can crushed pineapple
1 can cherry pie filling
1 yellow cake mix (used dry right from box)
1 stick oleo, I, melt mine a little, easier to drizzle over top

In a 9x 13 pan, spread pineapple evenly, same with pie filling, Add dry cake mix, sprinkle evenly, last drizzle oleo over the top.
Bake 350 till golden about 25-30 minutes Good, easy, can be served with Cool Whip, on top Enjoy

1-2-3 Cookies

1-8oz cool whip
2 boxes of cake mix - any flavor
3 eggs

Dump all 3 ingredients together and mix (batter will be thick and sticky). Use silverware spoon and scoop out small spoon fulls of batter on greased cookie sheet. Bake 375 for 9 minutes. I like them slightly under cooked. They freeze well.

Be creative:
Chocolate cake mix cookies- dip in white chocolate
Strawberry cake mix -- roll in powder sugar before you bake
Lemon cake mix -- roll in powder sugar before you bake

Here's a recipe I posted on this website. I always keep several boxes of cake mixes and instant pudding for this one. It's soooo easy and sooooo good and moist! Even better with a scoop of ice cream on the side.

Easy Easy Pound Cake

Ingredients
1 box cake mix
1 small box instant pudding (not the fat free type)
4 eggs
1 cup water
1/3 cup vegetable oil
Directions
Mix all together with beaters and pour into greased and floured bundt pan. Bake at 350 degrees F for 40-50 minutes (check with toothpick). Let cool in bundt pan for 20 minutes before inverting onto plate.

I received this recipe from my cousin Crystal about four weeks ago and have made about six of these, they're so good (and so easy). I've combined yellow cake/lemon pudding, lemon cake/vanilla pudding, yellow cake/vanilla pudding, caramel cake/vanilla pudding - all were very good and even better with a scoop of ice cream on the side. You can ice this cake if you want, but all I did was dust with powdered sugar.

You won't be disappointed!

I use this brownie recipe for the scouts potluck(I make 2 pans):
1 box cake mix, 2 eggs, 1/4 c oil, 1/4 c water, 1/4 c sugar- Mix the last 3 ingredients throughly and add eggs, Beat and stir in cake mix. Bake 350- 25 min 9x13 pan.

or Triple Fudge Brownies
1 small pkg instant pudding, 1 pkg cake mix , 6 oz chips 1/2 c nuts
Prepare pudding according to directions (with milk) add cake mix, Beat well stir in chips and nuts . use well greased 15x10 pan 350 30 minutes.


I also make Banana Bread
1 pkg cake mix (yellow or white) 1 egg 1/2 c milk 1 1/2 c mashed banana 1/2 c chopped nuts (opt) Makes 2 -8x4 loaf or 12 mini loaf. 350 40 min. Tastes like "hostess" .

Cake mix makes some yummy cinnamon buns (with yeast) Tastes like the box kind, do not get stale like homemade ones.

I'm a lazy cook, so my recipe is easy. Take box of yellow cake mix, put in large bowl. Melt one stick of margarine and add it with two eggs to cake mix. Add large can of peaches juice and all to mix. Put in 9x12 pan and bake till golden brown at 350 degrees. Serve warm with cool whip or ice cream. Tastes like peach cobbler.

Here is my favorite cookie recipe they are soft and great by themselves or make a cookie sandwich by putting your favorite icing or filling in between two cookies. You can also add choco chunks nuts etc. to make them special.

1 pkg. chocolate cake mix
3/4 cup shortening or veg oil
2 eggs
1 tablespoon milk

Mix together well.
Drop with spoon onto cookie sheet. They spread so give they room.
Bake ONLY 9 min. Allow to cool on pan they will be very soft. Firm when cool.

Large box Spice cake mix or any flavor you like.
15 oz pumpkin
1 cup chocolate chips

Mix and bake in muffin tins for twenty minutes at 350. Just make sure they spring back when you touch them.

Easy, quick, and only 2 ingredients. Mix 3/4 can of the pumpkin with one box of cake mix of your choice. Spoon in cupcake tins 3/4 full. That's it!
