1 1/2 cups flour
1 cup sugar
2 cup shredded cheddar cheese ( I recommend Velveta's shredded cheese)
3/4 cup milk (whole milk)
1 egg, beaten well
4 Tablespoon butter, softened ( I sit out the night before-stick of butter)
1 1/2 teaspoon baking powder
1/4 teaspoon vanilla

Directions:
Mix all ingredients together. Pour into greased muffin pan and bake at 400 for 10-12 minutes.
This recipe makes about 24 mini muffins.

I am looking for a recipe for homemade cheese biscuits where the cheese is a melted glob inside the biscuit.

I use the Pilsbury dough that's in the cans. I take one biscuit (usually the Grand size) and take a cube of cheeze (any kind works - but you want one that melts easily) I wrap the dough around the cheese cube and roll between my hands til' it's a ball - then I put on a ungreased baking sheet and bake until they're golden.

(usually following the baking directions on the can work).

Here's another good recipe.

Thaw one loaf of frozen bread. Cut in four pieces lengthwise and then each strip into 8 pieces. Take 1/2 pound sharp cheddar cut into 32 pieces. Wrap each piece of bread around a piece of cheese. Dip into melted butter. Put into bread pan and bake at 350 until brown on top. When done just pull apart pieces to eat. This is really good!
