No Bake Cookie RecipesWe love this recipe because it's fast and easy. Taste is great. These are great when your short for time. I put them in my kid's lunches.

Ingredients:

  • 2 cups sugar
  • 1 stick margarine or butter
  • 3 Tbsp. cocoa powder
  • 1/2 cup milk
  • 1/2 cup crunchy peanut butter
  • 1 tsp. vanilla extract
  • 3 cups oatmeal

Directions:

Mix sugar, butter, cocoa, and milk in medium saucepan. Boil for 1 minute. Add peanut butter and vanilla. Mix quickly until peanut butter melts, and then add oatmeal. Mix well until blended. Drop spoonfuls on tin foil or wax paper and allow to set and cool. That's it. I usually double this recipe.

Servings: 2 dozen 3 inch cookies
Prep Time: 15 Minutes
Cooking Time: 1 - 2 Minutes

Stir together butter, cocoa and sugar. Bring to boil and cook one minute. Remove from heat and add peanut butter, vanilla and oats. Stir well. Drop on wax paper and let cool.

Here's mine:
Ingredients:

* 2 cups sugar
* 1/2 cup cocoa
* 1 stick butter
* 1/2 cup milk
* 1/2 cup peanut butter
* 1 tsp. vanilla

Directions:
Mix butter, sugar, chocolate, and milk. Bring to a boil. Boil for 1 minute. Remove from stove and add oats, vanilla, and peanut butter. Let stand a few minutes. Drop on wax paper from spoon. When hard, they are ready to eat.And they didn't last long. :)

Delicious for Christmas time. In a large bowl, combine all ingredients except additional coconut and orange rind. Chill at least 1 hour. Shape into 1-inch balls. Roll in additional coconut mixed with rind. Store tightly covered in refrigerator.
