Mango Salsa on Sea BassThis is a delicious and easy salsa that is a change-of-pace from the usual. It tastes like freshness on a fork! You can change it up a little too. Use pineapple instead of mango. Add more/less/no hot peppers. Use lemon instead of lime. Serve it whenever you'd serve tomato-based salsa, but it goes really well with poultry and pork.

Ingredients:

Directions:

Chop the mango and avocado into about 1/2 inch pieces. I chop the tomato just a bit smaller.

If the lime doesn't give you at least 1 1/2 tbsp. of juice, use another, but use the zest from just one lime.

Use the white part of the green onion if you like more onion flavor, and more crunch. Use just the green part if you like less onion taste, more color.

Gently mix it all together so that the lime juice coats everything and keeps it from turning brown.

Cover and chill for a few hours so that flavors mingle. Stir before serving. Enjoy.

Peel and seed mangos. Place all ingredients in a blender and operate till it reaches the consistency you wish. Chill or eat right away.

1 mango, peeled, diced
3 peaches, peeled and diced
1 jalapeno pepper, diced

1 vidalia onion, chopped
1 red pepper, diced
3 scallions, sliced
3 limes, juice of
Directions
Mix all ingredients, serve.

Peach of a Mango Salsa

* 1 cup chopped mango
* 1 cup chopped fresh peach or nectarine
* 1 clove garlic, minced
* 1/4 teaspoon ginger
* 2 tablespoons chopped fresh basil
* 1/2 serrano chili pepper, diced (or to taste)
* 2 tablespoons fresh lime juice

Combine mangoes, peaches or nectarines, garlic, ginger and basil.
Mix in chilies and lime juice to taste.
Chill 2 hours before serving.

2 peaches, peeled, seeded
1 mango, peeled, seeded
2 tablespoons chives, chopped
1/2 garlic clove, minced fine
1/2 lime, juice of, fresh
1 whole jalapeno, chopped, including seed
2 tablespoons cilantro, chopped
Chop in hand-cranked food processor.
Mix well and refrigerate at least an hour.

Had mango salsa at a friend's house, and have adjusted the recipe to suit us. Love this with chips, on Mexican food, or even as a condiment to grilled meat. A wonderful mix of sweet and spicy.
