Breakfast BarsThis is a fairly healthy bar and is convenient when you have invited someone to your home because you can make these the night before and then just pop them into the oven in the morning.

Ingredients:

*Can use plain yogurt in place of buttermilk

Topping:

Directions:

Grease a 9x13 inch baking dish. Combine flour, oats, baking powder, baking soda, salt and cinnamon in a medium bowl; set aside.

Combine sugar, brown sugar and butter in large bowl. Beat with mixer at low speed. Increase speed to high and beat well. Blend in eggs and buttermilk. Gradually add in flour mixture, stirring until just blended. Fold in apples. Pour into greased pan. Spread topping over top and wrap and refrigerate overnight.

The next morning preheat oven to 350 degrees F. Uncover pan and let stand for 30 minutes. Bake for 45 minutes or until the toothpick comes out clean.

I am looking for an old recipe put out by Weight Watchers sometime in the 1970s or early 80s. I think it was called "peanut butter breakfast bars"? They were made using a slice or two of bread, which was torn up and put into a blend with peanut butter and most likely egg and maybe milk. Then poured into an 8x8 pan and baked and cut into squares. Sound familiar?

It seems I'm the only quinoa fan in my family. Sometimes that causes me to have leftover quinoa hanging around. One way to get my family to enjoy some of this high fiber, vitamin-packed grain is to put it into breakfast bars.
