Pour 1 cup milk over 3/4 cup rolled oats, let set 5 minutes. Add 1 tsp. vanilla, 1 Tbsp. sugar, 1/2 tsp. salt, 3 Tbsp. vegetable oil, and 1 beaten egg. Mix well.
Mix together 1/2 cup flour and 1 1/2 tsp. baking powder and add to oatmeal mixture, stir till just combined.
Bake on hot griddle till bubbly on top and golden brown on bottom, then flip over to bake the other side till golden.
Serve with desired toppings. We like to use applesauce on them.

Everyday can be a special day with these delicious pancakes. Top them with your favorite topping and enjoy.
Mix ingredients in the order they are listed. Bake on hot greased griddle. I use about 1/4 cup of batter for each pancake.
I make a larger serving of steel cut oatmeal to have quick breakfasts throughout my week. Sometimes, I'll use some of it by frying some up in an oiled pan as pancakes! It is purely oatmeal. I do add cinnamon and added blueberries to my oatmeal after I make it but nothing else different is added.
Mix the oats and buttermilk together and gradually add the remaining ingredients. Blend. Bake on greased grill.
This was a family effort. My mother started it, my sister in law improved upon it, and we all really enjoy it.
