It will soon be too warm to do much baking, especially if you can cook on the stovetop. It's easy and speedy and so yummy!

Total Time: 30 minutes

Yield: 8 to 10

Ingredients:

  • 1 lb lean ground beef
  • 1 jar spaghetti sauce
  • 1 box lasagna noodles
  • 1 1/2 cup mozzarella cheese

Steps:

Speedy and you won't have to heat up the kitchen!

  1. Brown ground beef in a large, deep skillet. Stirring to break it up and until brown.
  2. Stir half of the pasta sauce into the meat. Break noodles into strips and put on top, then cover with the remaining sauce.
  3. Fill empty pasta jar about 3/4 full with water and add to skillet (about 2 cups of water) Stir to combine.
  4. Bring to a boil, then reduce to simmer, cover and cook for about 25 minutes, stirring occasionally.
  5. Add cheese to top, "do not stir" again. Cover and cook about 5 minutes more, until cheese is melted.

So good and easy. Enjoy!

The easiest is the one right on the box of Barilla no bake lasagna noodles. You just put them in uncooked and they soften while baking. If I have time, I'll take a couple Italian sausages, cook them up and let the chill.

Slice very thinly on the diagonal, so that they slice up into thin ovals, and put that on one or more of the layers. It's delicious and feeds many people or is great as leftovers too.

Quick Fix Lasagna

5 cups spaghetti sauce
1 box (8 oz.) Whole Wheat Lasagna
1 lb. Ricotta or cottage cheese
8 oz. Mozzarella cheese, shredded
3/4 cup grated Parmesan cheese

Preheat oven to 350 degrees F. In a 13x9x2-inch baking dish, spread 1 cup of the sauce; arrange a layer of uncooked lasagna; top with 1 1/3 cup sauce, 1/2 of the Ricotta, 1/3 of the Mozzarella, and 1/3 of the Parmesan cheese. Repeat, gently pressing lasagna pieces into cheese mixture below.

End with a final layer of lasagna; pour remaining sauce over, making sure all lasagna pieces are covered with sauce; top with remaining Mozzarella and Parmesan cheese. Bake 45 to 55 minutes until lightly browned and bubbling. Allow to stand 15 minutes; cut into squares to serve.

Serves 6 to 8

Note: For health reasons I prefer whole wheat noodles and pasta. I also make my own spaghetti sauce in place of the store bought brands.

Brown hamburger, onion and green pepper in large pan. Drain off fat. Cook noodles in boiling salted water for 3 minutes, drain, and rinse with cold water.

Fry the hamburger, onions and garlic together, then add the next 5 ingredients. Fry this on low heat for about 15 minutes, stirring occasionally.

Meanwhile, boil 2 qt. pan of water and add 1 1/4 cups macaroni.

Brown ground beef in large skillet, stirring until crumbly. Pour off drippings. Sprinkle half the spaghetti sauce mix over ground beef. Spread cottage cheese on top. Cover with noodles. Sprinkle with remaining sauce mix. Pour tomatoes over all.
