Spanish Rice Recipes

November 5, 2015

My grandmother, who was Mexican taught me how to cook this Spanish rice. Now my son who is 24 and living on his own, makes his own.

Total Time: 20-30 minutes

Yield: 6 or more servings

Source: My grandmother

Ingredients:

  • 1 cup long grain white rice
  • 3-4 green onion stalks, cut small (more or less, depending on your taste)
  • 1 small ripe tomato, diced
  • 1 1/2 cup chicken stock, warmed
  • 1 can (small) tomato sauce (I use the spicy tomato sauce, but it's a matter of taste)
  • Adobo seasoning to taste
  • pepper to taste
  • 2 Tbsp oil, any kind of your choice
  • 2 Tbsp butter (not margarine, or I can't Believe it's not Butter)

Steps:

  1. Saute the green onion and rice until the rice is slightly browned and has a nutty smell to it.
  2. Add the tomatoes and stir in.
  3. Then add the warmed chicken stock and tomato sauce.
  4. Season with the Adobo, or salt and pepper to taste, then add the butter.
  5. Simmer 18-20 minutes, or until rice is done and all liquid is absorbed and rice is tender.

I make a simple spanish rice:

3/4 cup white rice
1/2 cup chopped onion
1 chopped green pepper
1 tbsp tomato paste
Worcestershire sauce
Chicken boullion

Chili powder
Dried parsley

Cook onions and peppers in a saucepan with a little oil until tender. Stir in uncooked rice, 1 and 1/2 cups water, tomato paste, a dash of Worcestershire sauce and chicken bouillion (I use about half a cube). Season with chili powder to taste, add a pinch of parsley. Bring to a boil then cover and reduce heat to low, cooking ten minutes or until rice is tender.

Saute med size chopped onion in olive oil until translucent, add 1 cup white rice stirring until rice is fully covered and translucent. Add salt, pepper, garlic powder and chili powder. Mix and add 1 8oz can of tomato sauce and1 1/2 cups water.

Bring to boil, set on low heat covered for 15-20min. I sometimes add a small can of diced tomato with juice, this makes up some of the liquid.

Mine is even easier and have been making it forever.1 cup white rice. Saute in one tablespoon of whatever you like, butter, margarine, oil or olive oil. It doesn't really matter Saute for 1-2 minutes add 1 can Rotel original and 1 3/4 cups water. If you want it very spicy try hot Rotel or mild for little a spice. Bring to boil and simmer for 20 min. Perfect every time.
