Competed Whoopie PieI got this recipe from Weight Watchers many years ago. I am ashamed to admit that I am a Weight Watcher's quitter! Any-hoo. These cookies are amazing. They are only 2 points per serving. I'm sure it would be better if I limited the amount that I ate, but they are so good!

Total Time: About 15 minutes, plus cooking time.

Yield: The recipe says 18 servings, but I only got 13.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/4 cup solid vegetable shortening (I like the butter-flavored)
  • 1 egg white
  • 1/2 cup low fat (1%) milk
  • 3/4 cup marshmallow spread

Steps:

  1. Preheat oven to 425 degrees F. Combine the flour, cocoa, baking soda and salt in a small bowl.

  3. With an electric mixer on medium speed, beat the sugar, shortening and egg white in a medium bowl until fluffy and well blended, about 2 minutes.

  5. Stir in the flour mixture then the milk, until just blended.

  7. Drop the dough by spoonfuls onto a large, ungreased baking sheet, making 36 cookies. (I only got about 26 cookies. They were a little larger than called for. Oops!)
  8. Whoopie Pie Step 4
     
  9. Bake until the top springs back when lightly touched, 5-7 minutes.
  10. Allow to cool completely then spoon 2 teaspoons of marshmallow spread on the bottom of the cookie. Top with another cookie.

*It's best to make these as you are going to eat them. The marshmallow cream tends to ooze out and cause a mess. I just keep the cookies in a container and make them up when the need arises!
