In layers, add sugar and cocoa powder. Clean inside of jar with a paper towel after this layer. Then add flaked coconut, sprinkled with almond extract, toss to blend, then add almonds.
Start filling the jar with the ingredients in order starting with the coconut. Lastly, add mixed flour a little at a time, pressing in tightly after each addition.
Mix flour with baking powder and salt. Start filling jar with sugar at the bottom. Add cocoa powder, cleaning the inside of jar with a paper towel after this layer.
