Honey Lemon CakeI came up with this cake when my husband had the flu and asked, "Why do all things honey lemon have to be medicine?" Let's just say that's been remedied. This cake is very moist and always hits the spot. I've gotten asked for the recipe by everyone who has tried it, even non-bakers. I used an amazing local honey from Washington state, but I have been successful making this using all kinds of honey (squeezy bear, too).

Total Time: 50 minutes

Yield: 10 servings

Ingredients:

  • 1 cup all purpose flour
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 1 Tbsp butter or oil
  • 1 Tbsp lemon zest
  • 1/4 cup lemon juice
  • Glaze
  • 3/4 cup powdered sugar
  • 3 tsp lemon juice and some lemon zest

Steps:

  1. Preheat oven to 350 F and grease a 9 x 9 inch baking pan. Combine egg, applesauce, honey, butter or oil, zest and lemon juice. Whisk thoroughly.

  3. Combine flour, baking soda, baking powder, and salt. Whisk thoroughly.

  5. Fold dry ingredients into wet, eliminating all lumps.

  7. Pour batter into pan.

  9. Bake in 25 to 30 minutes or until a toothpick comes out clean. Remove and cool.

  11. To make the glaze, combine the powdered sugar, lemon juice and zest. Mix with a clean whisk until it is smooth.

  13. Pour over the cooled cake.

  15. In this example, I cut my 9 inch cake and half, put a bit of glaze on layer one, then most on the very top.

Does anybody have a recipe for honey cake that is made in a loaf pan? I remember my mother adding coffee and I think whiskey to it and we girls got to do the walnuts (chop them and also put halves on the top). Thanks!

This recipe is made with coffee and brandy but it is baked in a 9" square pan:

This cake is made in loaf pans and has coffee and whiskey in it but they use almonds. Maybe you could use walnuts.

Crunchy Yummy Treats
Ingredients:
1/2 cup peanut butter
1/2 cup honey
3/4 cup nonfat dry milk
1/2 cup Rice Krispies
1/2 cup raisins or chocolate chips

Directions:

Put all ingredients into a bowl. Mix well with a spoon. Roll into small balls. Place the balls on waxed paper. Chill for 1 hour and serve.

This recipe serves/makes 20

HONEY COOKIES
1/2 cup butter or margarine, softened
1/2 cup natural peanut butter
1/2 cup honey
1 egg
1 tablespoon vanilla extract
1 cup sifted whole wheat flour
1/2 cup dry milk powder
1/2 cup wheat bran
1 teaspoon baking soda

Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together the butter and peanut butter until smooth. Mix in the honey, egg and vanilla. Combine the whole wheat flour, dry milk powder, wheat bran and baking soda; stir into the peanut butter mixture. Drop by teaspoonfuls onto ungreased baking sheets.

Bake for 8 to 10 minutes in the preheated oven, or until edges begin to brown. Remove from baking sheet to cool on wire racks.

This yummy and easy cake is addictive and tastes just like a honey bun! It's a great dessert, but also delicious for brunch when served with coffee, sliced fruit and sausage.
