Meatballs in tomato sauce.This is one of my favorite recipes. It's a real change of pace from the usual. The meatballs are tender and flavorful, and the sauce is to die for. I usually double or even triple the sauce since it is just wonderful over rice.

Ingredients:

  • 1 lb. ground beef (ground pork or turkey is good too)
  • 2 tsp. grated ginger
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/2 tsp. coriander
  • 1 tsp. cumin
Sauce:
  • 2 Tbsp. butter
  • 1 tsp. coriander
  • 1/8 tsp. cayenne
  • 1 Tbsp. lemon juice
  • 2 Tbsp. creamy peanut butter
  • 1/2 cup finely chopped onion
  • 1/4 tsp. powdered ginger
  • 1 Tbsp. brown sugar
  • 1 Tbsp. soy sauce

Directions:

Mix the meat and the rest of the meatball ingredients lightly, working it as little as possible to get it thoroughly mixed. Shape into 16 meatballs. Place on a foil lined broiler pan and make the sauce.

For the sauce, melt the butter in a skillet. Saute the onion until it is softening. Add the coriander, ginger and cayenne and stir it in until the onion is fully tender. Add the remaining ingredients, stirring constantly for a couple of minutes. Remove from the heat.

Place the meatballs under a preheated broiler 4 inches from the heat. Broil for 3 minutes. Brush on the sauce and continue broiling for 3 minutes. Turn the meatballs and brush more sauce on. Broil for 3 or 4 more minutes, until cooked through.

You may also brown the meatballs in a skillet, then add them to the sauce in its skillet. I do this when I double or triple the sauce. Once browned, I simmer them, stirring often, until they are done.

This is good served with rice or pasta.

Mix together all meatball ingredients. Shape into small meatballs. Melt 1 Tbsp. shortening and brown meatballs until cooked. Remove from skillet and pour off fat.

Yummy and kids love it. Mix the stove top stuffing according to directions. Put aside. Mix ground beef with egg, milk and oatmeal. Add salt and pepper to taste.

I am looking for a recipe that was on the back of the Heinz 57 bottle in the 80s. You made meatballs with Parmesan cheese. The sauce was Heinz 57, canned tomatoes, and sugar. You served it over noodles. Can someone help?

I looked for the recipe and have not found it as yet but here is one that could be used for meat balls instead of roast.

57 Sauce Great American Meat Loaf
1/2 cup seasoned dry bread crumbs
1/4 cup milk
1-1/2 pounds lean ground beef
1 egg slightly beaten
1/4 cup finely chopped onion
1/4 cup Heinz® 57® Sauce
1/2 teaspoon salt
1/8 teaspoon pepper
Combine ingredients thoroughly. Shape into a loaf (8 inches x 4 inches) and place in shallow baking pan. Bake in 350-degree oven for 1 hour. Allow meat loaf to stand 5 minutes before slicing. Serve meat loaf with additional 57 Sauce, if desired.
Cook time: 1 hour

SAUCED MEATBALLS

Ingredients:

1 pound ground beef5 (ground chuck recommended for flavor)

2/3 cup grated Parmesan cheese6
1/2 cup seasoned dry fine bread crumbs
1/2 cup milk
1/4 cup minced sweet onions7
1 egg, lightly beaten
1/2 teaspoon kosher salt8
1/2 teaspoon freshly ground black pepper9, or to taste
2 tablespoons shortening or vegetable oil
2 (14-ounce) cans diced tomatoes10
1/2 cup Heinz 57 Sauce
1 teaspoon brown sugar
1/2 teaspoon salt
1 Tablespoon flour
Hot buttered noodles or rice, if serving as an entree
Chopped fresh parsley for garnish

Preparation:
Using a large serving fork, combine ground beef11, Parmesan cheese12, bread crumbs, milk, sweet onions13, egg, salt14, and pepper15. Using 1 rounded tablespoon for each, roll ground beef mixture into about 30 meatballs.

In a bowl, mix together canned tomatoes16, Heinz 57 Sauce, brown sugar, and salt until combined. Set aside.

Frying Method:
Heat a large, deep skillet over medium heat.

Add shortening or oil and brown meatballs on all sides. Drain fat. Sprinkle with flour and gently stir meatballs to coat. Proceed with the sauce.

Baking Method:
Preheat oven to 450 F. Line a jellyroll pan with a Silpat17, non-stick foil, or parchment paper. Line up the meatballs, placing them 1 inch apart. Bake for 15 minutes. Transfer to a heavy, deep skillet over medium heat and sprinkle with the flour. Stir to coat. Proceed with the sauce.

Pour tomato mixture over meatballs. Simmer uncovered 20 to 30 minutes or until sauce18 thickens to your liking. Stir several times as it cooks to prevent sticking and encourage even cooking.

Serve meatballs with sauce over hot buttered noodles19 or rice and sprinkle with chopped parsley. Sauced meatballs may also be used as an appetizer20 (a crockpot21 works well to keep them warm) or in meatball sandwiches22 topped with cheese23.

Yield: 6 to 8 servings in about 3 cups of sauce as a main dish (about 30 meatballs)

Saucy Meatballs
Ingredients:
1 lb of lean ground beef
2/3 cup of grated Parmesan cheese
1/2 cup of seasoned dry bread crumbs
1/2 cup of milk
1 egg, beaten
2 tbsp of shortening
1 tbsp of flour
1 (28 oz.) can of tomatoes, cut into bite-sized pieces
1/3 to 1/2 cup of Heinz 57 Sauce
1 tbsp of sugar
Hot buttered noodles

Instructions:
------------

Combine the first five ingredients. Shape into approximately 20 meatballs using a rounded tablespoon for each. Brown well in shortening. Drain excess fat. Sprinkle flour over meatballs; stir gently to coat meatballs. Combine tomatoes, Heinz 57 sauce, sugar and salt. Pour over meatballs. Simmer uncovered for 25 minutes or until sauce is desired consistency, stirring occasionally. Serve meatballs and sauce over noodles.

Yield: 5 servings (about 3 cups of sauce)

I need some help with spices. In this mushroom meatball recipe, the gravy is great, and the meatballs are good, but kind of bland. I don't want them to be spicy as in hot, just more flavorful. What herbs/spices would you add to the meatballs? I will probably try any and all suggestions since I make this a lot. Exact measurements would be appreciated. Thanks in advance.

Mushroom Meatballs

Mix all but soup, milk, and water. Shape into meatballs, place in single layer in sprayed 9 X 13 inch pan. Stir soup, milk, and water together until smooth. Pour over meatballs, cover tightly and bake at 350 degrees F for 1 hour. Serve gravy over rice or mashed potatoes.
NOTE: For more gravy, use 2 cans of soup, 1 soup can each of milk and water.

Some spices you can use for the meatballs, but not necessarily together. A little experimenting would do nicely.
Allspice, Basil, Marjoram, Paprika(tends to be a little hot if too much is used), Oregano, Italian spice mix. Diced garlic, Worchester sauce and ketchup are also a great add in for meatballs. If using ketchup cut the amount of liquid by however much ketchup you add.

Sometime I use thyme or poultry seasoning. They both go well with meatballs and mushroom soup and add a lot of flavor.

One of my favorites is Summer Savory - a herb that adds great flavor to many recipes. It's hard to find in stores, so you can order it from Penzey's. Use about one-half teaspoon for 1 to 1 1/2 pounds of meat. I like to break it down a little further than it is when you get it, by pressing and rubbing with the back of a spoon, especially the larger pieces (stems). Summer savory gives things a wonderful flavor and goes really well with chicken.

Mix meat ball ingredients well and form into balls the size you want. Brown meat balls and pour off grease. Cover with sauce and bake 1 1/2 hours at 350 degrees F.

This is a healthy, different kind of meatball that I make. I liked the addition of wheat germ instead of bread crumbs. I used beef instead of the pork. Any kind of ground meat would work. I got 19 good sized meatballs from this recipe, and it states it makes 12-16.
