Does anyone have this recipe, I can only describe it, but maybe someone will recognize. Its a deli (cold) potato salad, there is a bacon flavor, no eggs, creamy texture but not mayo. It also had finely chopped softened (cooked?) onions. I asked, of course, they were not telling! Does anyone know how I can replicate this?

Combine potatoes and dressing; mix lightly. Chill 1 hour. Add celery and eggs. Mix sour cream, onion, parsley, pickle, pimento, mustard, salt and pepper.
Scrub potatoes under running water. Cook unpeeled potatoes, covered, in boiling water (lightly salted), 20 minutes or until just tender. Drain and cool. Cut in halves or quarters.
Wash potatoes and cut in cubes. In covered saucepan, cook potatoes in boiling water to cover, 20-25 minutes. Drain well.
How long do I boil potatoes for potato salad? don't want it to come out like mashed potatoes.
Mix dressing ingredients and pour over potatoes, eggs, celery and onions. Let stand overnight to blend.
Mix the mayonnaise, mustard, sugar and vinegar together. Add the potatoes, eggs and onion. Add salt and pepper. Top with paprika, if desired.
Mix all ingredients in a LARGE bowl. Refrigerate one (1) hour before serving. Refrigerating overnight will be even better.
