Ingredients:

  • 2 large eggs
  • 2/3 cup cornstarch
  • 1 1/4 cup water
  • 1 1/2 Tbsp. oil

Directions:

Combine all in blender and whirl until smooth. Heat crepe pan or small skillet, brush lightly with oil.

Heat skillet until drops of water sizzle. Spoon a scant 1/4 cup of batter into pan, tilt to spread evenly in crepe-fashion. Cook about 1 1/2 minutes until batter is completely set. Turn wrapper out onto paper towels to cool.

Makes: 12-14

Where do you buy lumpia in Vermont? My grandma moved here from Washington and can't find it anywhere. I guess its some kind of wrap, similar to spring roll wraps? Thanks in advance!

Its called won-ton wrapers and you can usualy find them in the produce section.

A large egg roll wrappers. Find frozen in Filipino and Asian markets.
