Fluffy Lemon Pie

Ingredients

  • 1 package lemon gelatin (3oz.)
  • 1 cup hot water
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 can evaporated milk, chilled
  • 1/2 tsp. salt
  • Advertisement

  • 1 cup crushed vanilla wafers

Directions

In a bowl dissolve the gelatin in the hot water. Add the sugar and lemon juice. Mix well and chill until slightly congealed. Beat the chilled milk at high speed until very fluffy, adding the salt while beating. Slowly fold the milk into the highly congealed gelatin until well mixed. Line a 9x13 inch pan with the vanilla wafers. Turn the gelatin mixture into the pan over the wafer crumbs, and chill thoroughly. Serves 12

Spread half of the cherry pie filling on bottom of crust. In a large bowl, beat cream cheese with wire whisk until smooth. Gradually beta in milk until well blended.
