Short-cut Banana Bread

This recipe is so easy and tastes great.

Ingredients:

  • yellow cake mix
  • 2 eggs
  • 3 overripe bananas
  • 1 cup of chocolate chips, or nuts (optional)

Directions:

Mix your cake per box instructions, then mix eggs and bananas. Do not add extra eggs. Add your chocolate chips or nuts and mix well. Grease 2 small loaf pans or one large one. Cook at 350 degrees F for 35 to 40 minutes. Then enjoy!

Servings: 2 loaves
Prep Time: 10 Minutes
Cooking Time: 30-40 Minutes

Roasted Red Potato Salad
I love cilantro but if you don't then simply substitute with Italian parsley or celery leaves :-)

Ingredients:

  • 2 lb. red potatoes, cut into 3/4 inch cubes
  • 1 1/2 Tbsp. minced garlic
  • 1 1/2 Tbsp. extra virgin olive oil
  • Salt and pepper to taste
  • 3/4 cup mayonnaise
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. fresh lemon juice
  • 1/4 cup fresh cilantro leaves, finely chopped
  • 2 hard boiled eggs, chopped
  • 1/2 small red onion, chopped

Directions:

Preheat the oven to 400 degrees F.

Toss potatoes, garlic and oil in a large bowl, season with salt and pepper, toss again, spread evenly on an oiled foil lined baking sheet, roast until just tender, about 15 minutes, remove from oven and let cool completely.

Whisk mayonnaise, mustard, lemon juice and cilantro in a small bowl until all ingredients are completely incorporated.

Toss cooled potatoes, eggs and red onions in a large bowl, add mayonnaise mixture, toss again, season with salt and pepper if desired, cover and refrigerate for at least two hours to let flavors meld. Toss again just before serving.

Spicy Bean Burritos
I love making an extra batch of these to freeze and then bake them at another time; just be sure to thaw them in the refrigerator the night before baking to insure even heating. Another thing I've done is go ahead and bake, let cool, wrap individually and freeze and then you can just grab one or two and microwave for a quick individual meal in a pinch. I know they don't have to be prebaked to microwave them but the flavor and filling consistency is much better doing so.

Ingredients:

  • 8 small flour tortillas
  • 1 can (16 oz) refried beans
  • 1 1/2 cups shredded cheddar cheese, plus 1 cup
  • 1 cup salsa
  • 1 cup cooked rice
  • 4 Tbsp. canned diced jalapenos, drained

Directions:

Preheat oven to 375 degrees F.

Combine the beans, salsa, rice, the 1 1/2 cup of cheese and jalapenos in a bowl.

Spread 1/2 cup of bean mixture about 1/3 of the way in on one edge of each tortilla and wrap and roll up burrito style.

Arrange burritos in a greased baking dish, sprinkle with the remaining 1 cup of cheese, cover and bake until heated through, about 20 to 25 minutes.

Honey Chicken
The recipe is sweet and tender. It is easy to prepare and everyone loves it.

Ingredients:

  • 1 whole chicken, cut up
  • 1 cup water
  • 1 cup soy sauce
  • 1 bunch green onions, chopped
  • honey to cover

Directions:

Wash chicken thoroughly. Put cut up chicken in a large dutch oven (pot). Add water, soy sauce, and chopped green onions. Stir with a wooden spoon just to mix liquids together and for chicken to be immersed.

Bring to a boil on high heat. Reduce heat and simmer on low to medium heat, with lid tilted, not completely covering pot. Simmer until chicken is tender, almost falling off the bone.

With prongs take the chicken out of the pot and place in a casserole dish large enough to single layer chicken pieces. Discard liquid left in the pot.

Spoon or pour honey over chicken until covered. Bake uncovered at 350 degrees F until chicken is slightly browned; just enough time to keep the chicken moist.

Zucchini Patties
This is my "mystery" plant. Every year, I save seeds from last year's fruit. I had my tomatoes, cucumbers and peppers all marked as such, but I had one lot of seeds I did not know what they were. I planted them anyway and they turned out to be zucchini. I do not even remember saving them.

Ingredients:

  • 1 cup biscuit mix
  • 1/2 cup shredded cheese
  • 2 eggs, beaten
  • 2 cups shredded zucchini
  • 1 Tbsp. chopped onion
  • dash of salt
  • 1 Tbsp. butter or margarine

Directions:

Mix all together except for butter or margarine. Melt butter or margarine in large skillet. Drop spoonfuls of mix into hot skillet. Fry 3-5 minutes on each side until golden brown. Drain on paper towel. Serve hot.

Servings: 8

Sausage and Macaroni Dinner
Easy to make and delicious!

Ingredients:

  • 1 pkg. macaroni and cheese dinner
  • 1 lb. smoked sausage, cut into 1-2 inch pieces
  • 1 1/2 cups broccoli flowerets
  • 1 cup green or red pepper strips
  • 2 Tbsp. chopped onion
  • 1/2 tsp. dried oregano leaves

Directions:

Prepare macaroni and cheese dinner according to package directions. Cook sausage 6 minutes in large skillet, over medium low heat. Add vegetables and oregano, continue cooking until vegetables are tender. Add mac and cheese dinner and mix well.

Servings: 4-6

Cooking Time: 6 Minutes

4th of July White Chocolate Strawberries
A few colored plastic spoons, strawberries, Dolcie Fruit Dipper, add a flag and you have a beautiful, edible centerpiece.

Ingredients:

  • strawberries
  • white Dolcie Fruit Dipper
  • plastic spoons
  • small USA flag
  • plate

Directions:

Wash and dry off strawberries. Set aside to dry more. Melt candy Dolchie chips in the microwave according to package. Dip strawberries into candy melt and immediately place strawberry on the plastic spoons. Arrange on a plate and add a dollop of candy melt to the center of the plate and strawberry so the flag can stand up. Eat or enjoy the view.

Servings: number of strawberries of choice

Light Strawberry Pie
With strawberries in season and with most people trying to eat healthy, this is an excellent recipe!

Ingredients:

  • 8 oz. can crushed pineapple (well drained)
  • 8 oz. package sugar free and cook and serve vanilla pudding
  • 8 oz. package sugar free gelatin
  • 3 cups sliced strawberries
  • 1 reduced fat graham cracker crust
  • 1/2 cup reduced fat whipped cream topping

Directions:

Drain pineapple, reserving juice. Set pineapple aside. Add just enough water to measure 1-1/2 cups. Transfer to saucepan. Whisk in pudding mix and gelatin till combined. Stir in pineapple.

Remove from heat. Cool 10 minutes. Add strawberries, toss gently and pour into crust. Garnish each piece with 1 Tablespoon of whipped topping.

Servings: 8

Cooking Time: 5 to 10 Minutes
