Mock Corned Beef and Cabbage DinnerWhile the store shelves are just baron, we have to get what we can and work with it, even if it means changing a few things. Today being Saint Patrick's Day, I went to the grocery store to get everything for my corn beef and cabbage dinner. Well, much to my surprise, there was not a corn beef in the store. I was crushed! So I just went to the Deli department and ordered a pound of thick sliced red corned beef. And worked it out from there, with a bit of the Luck of the Irish upon me!
Instant Pot Corned Beef and VegetablesI make corned beef and veggies every March in honour of my late grandfather. He was born on St. Patrick's day and absolutely adored corned beef. Now, this is first time I've tried making it all in my Instant Pot. I'm so happy I did because it was so incredibly delicious and super tender. This is by far my favourite method for making this dish.
Edible Pots of GoldThis a super simple recipe for St. Patrick's Day that is kid-friendly. These little pots of gold are made with peanut butter cups, but you can also use mini chocolate cupcakes or Rolo candies. Topped with a bit of frosting and edible gold glitter, these make great dessert toppers, or can be eaten as is.
Shamrock PretzelsThese shamrock pretzels are very easy to make, consisting of only two ingredients: pretzels and candy melts. They are a great sweet and savoury snack on their own, but also make great dessert toppers. Happy St. Patrick's Day!
New England Corned Beef & Cabbage DinnerI was born and raised in Boston. I am not Irish but on Saint Patrick's Day, everyone is Irish whether you are or not! We grew up having a corned beef dinner with cabbage, potatoes, carrots, turnips and beets. It was a must.
Corned Beef DinnerFor Saint Patrick's Day this year I decided to do a variation on the normal corned beef and cabbage. I started with a recipe I found in the Better Homes and Garden's New Cook Book and modified it to work in my crockpot.
Pot O' Gold DoughnutsThese cute little pot o' gold doughnuts are a great treat to make for St. Patrick's Day.
Pesto Shamrock PizzasThese delicious pizzas are topped with pesto and spinach and are sure to be a hit at your next St. Patrick's day party!

Leprechaun Trap CakeMany kids have an opportunity to make a leprechaun trap at school when they are young. After seeing one that my kids brought home, I thought it might be fun to try and make a leprechaun trap cake.
New England Corned Beef DinnerEven though I live in Indiana now I am still a New Englander. These dishes are traditional St Patrick's Day corned beef dinners. We only make them once a year so they are special.
