Greek Lemon Chicken Soup (Avgolemono)

Greek Lemon Chicken Soup (Avgolemono)The addition of the egg and lemon makes a basic chicken soup into the ultimate comfort food. The finished dish is tangy and savory, with flavors reminiscent of egg drop soup. Best of all, it is easy to put together for a quick weeknight dinner.

Chicken Soup in bowl on set table

Instant Pot Bone BrothWe have all been sick this winter, so we look for easy ways to make chicken soup. There is no easier way than this. Just throw it all in the instant pot. If you don't have an instant pot, you can achieve the same in a giant stew pot cooked for over 6 hours, or a crockpot.

Additional vegetables to Chicken Soup

Additions to Chicken SoupI know at one point I have posted my homemade chicken soup. Today I found out that two of my neighbors' families have come down with the flu! Well, there is 'only'one cure for anything that ails you... chicken soup! I made a huge pot of soup. My basic chicken soup with onions, celery, carrots, seasonings, and noodles. I packed two big bowls and put them outside my neighbors' doors.

Roast Chicken and Tomato Noodle Soup in bowl

Roast Chicken and Tomato Noodle SoupI love to use the leftovers from my roast chickens to make soups. The carcass is used to make the stock, but the meat is set aside and dropped in at the end of the soup-making process so it stays juicy and does not lose its flavour. I came up with this when I saw my mum pushing away the meat from a chicken noodle soup, saying that all the goodness from the chicken chunks had been sucked out, leaving nothing but dry stringy squares. I think I've done that before, too! This is a wonderful and comforting soup that is very easy to make.

Chicken Ramen soup

Lemon Chicken Soup in bowl

Lemon Chicken SoupI came up with this recipe when I had next to nothing in the house to cook with. I had a roasted chicken that was torn to bits, lemons from my garden, carrots and onions that I'd dried over the summer, and some quick oats. For being so bare-bones, it was absolutely delicious, and was even better the next day. So comforting!

bowl of Soup

Coconut Chicken SoupThis recipe of mine is based around one of my favourite Thai soups, Tom Kha Gai. Since my easy-to-get-to local shops don't carry lemongrass, galangal, or kaffir lime leaves, I've made substitutes that do a great job of mimicking them (until I can get out to the proper shops)! I hope you give this a try.

Fava Bean and Chicken Soup in serving bowl
