Ice Cream Sandwiches with Blackberry SauceI recently made a bunch of blackberry sauce for using on ice cream and waffles. My son decided to put some on his ice cream sandwich and it was amazing! He also added a few fresh raspberries. Give it a try. :)

Six Minute JelloPut one small box of any flavored gelatin into a blender. Add 1 cup of boiling water and blend on low speed for 30 seconds. Add 1-1/2 cup crushed ice and blend on high speed for 30 seconds. Pour into a small bowl and set in the refrigerator for 5 minutes. This dessert treat tastes like sherbet.

Chocolate Eclair DessertLine a non-stick cooking sprayed 9x13 inch pan or dish with whole graham crackers. Mix pudding and milk and fold in the Cool Whip. Put half of the pudding mixture on crackers.

Chocolate Bread Pudding With Hard SauceYummy! Heat the milk, chocolate, and margarine in large sauce pan until melted. Put bread in a large mixing bowl. Pour chocolate mixture over bread, add sugar, eggs, salt, and vanilla, mix well.

Sundae SurpriseThis sundae is refreshing and so very different. Make a sundae as usual, using cranberry sauce for the topping. I do not add Cool Whip, but it could be used if desired.

Scalloped PineappleMix melted butter, sugar and eggs together. Then add milk, bread cubes and pineapple, juice and all. Mix all together; put in a baking dish. Bake, uncovered, for 1 hour at 350 degrees F.

Sweet Pumpkin TreatHere's a sweet pumpkin treat that doesn't need a pie shell. Make a pumpkin smoothie by chilling a 15-ounce can of pumpkin and a 12-ounce can of evaporated milk. Combine the pumpkin and milk with 8 ounces of low-fat vanilla yogurt, 1/4 cup granulated sugar and 1/4 tsp. pumpkin-pie spice.

Marshmallow Treats for Any HolidayYou can use pretzel sticks or larger pretzel rods for this treat. Mini marshmallows or regular sized. Simply melt some chocolate in the microwave or double boiler and dip your marshmallows on a stick in the chocolate. Add sprinkles and allow to cool.

Healthy Caramel PopcornTake popcorn that is already popped. Then take 3 tablespoons of peanut butter and mix with 3 tablespoons of honey. Melt together over low heat till runny. (if it needs to be more liquid, add more honey) Pour over the popcorn. Toss well. The kids and adults I have made this for love it.

Fruit Salad With SherbetMy parents went on a weekend get-away when I was a teenager, and were served this dish in the restaurant at their hotel. Upon returning home, my mother re-created it and it is delicious!

Rice Crispy Caramel TreatMelt together 14 oz.caramel with 3 Tbsp. water. Add 5 cups Rice Crispies and 1 cup peanuts and mix. Spread in a 9x13 pan and press. Sprinkle 1 cup each chocolate and butterscotch chips on the Rice Crispies. Bake at 200 degrees F until chips are melted. Cut into bars.

Twinkies And PuddingI want to let you all in on this. Take twinkies, slice them in half then layer them in a pan. Pour your vanilla or banana pudding over them. Layer again, then cut bananas up and layer (or you can put the bananas in the pudding).

Making Your Own Cool WhipI like to make cool whip with a little milk, about 1/3 cup and about a tbsp vanilla and then a little sugar to taste. It doesn't really get as stiff as the store bought but it tastes great over thawed blueberries. it is also great in coffee and over jello.
