Banana CrepesA favorite of many people here on the islands is crepes made with fresh bananas. Once the bananas are cut from the banana plant they are hung upside-down to ripen. Many times we have too many ripe bananas to use. Therefore, we take the over ripe bananas and make Poe and crepes. The crepes are delicious eaten alone or topped with fresh coconut milk. So next time you have over ripe bananas try making some banana crepes.
Fried ApplesFall will soon be here and so will the fall apples. There are so many ways to prepare them but one of my favorites is fried apples. I never was good at frying them until I ran across this recipe on the internet. I made a few changes and just want to share the recipe.
Sauteed Apples with Slivered AlmondsSauteed apples are great as a breakfast side or with a meal featuring pork and even as a simple yummy treat but adding the almonds adds a nice extra touch. I happen to like mine plain but feel free to spice with cinnamon and/or nutmeg to taste.
Fruit Roll-upsI love fruit roll up snacks but can't afford the price at the grocery store. This recipe is so quick and easy and no preservatives. My next experiment will be to see if one freezes well and if it does, I will make multiple batches ;-)
