Dad's Baked BeansSoak beans overnight. Put on to boil in cold water with soda. Boil 5 minutes. Drain. Wash with boiling water. Drain. Cover with fresh boiling water.

Scalloped TomatoesMix bread crumbs and melted butter. Pat into a greased 9x13 inch pan. Melt butter in pan; add onions and lightly brown. Add tomatoes, sugar, tapioca, salt, and paprika and cook 5 minutes.
Simmered Garbanzo Beans and Tomato With BasilA yummy, nutritious side dish.
Bean and Onion BakeSaute onions in butter until limp; blend in flour, salt, mustard, and pepper. Add milk; stir until mixture thickens. Blend in 1/3 cup of cheese and fold in green beans.
Yam Souffle'Beat eggs, brown sugar, orange peel, salt and nutmeg. Add yams, milk, pecans and butter. Pour into a slightly oiled casserole dish and bake 50 minutes at 350 degrees F.

Pineapple Cheese CasseroleThis is a great side dish to serve with Ham. The pineapple flavor just seems to go with Ham. It is easy to do. And makes a big hit at a covered dish dinner.
Southern Hot Cheesy Garlic GritsA bit too hot for me, but those who like spicy dishes love this! Stir grits into salted boiling water in heavy saucepan gradually. Return to a boil; reduce heat. Cook for 2 1/2-5 minutes or until thickened, stirring occasionally.
Orange Glazed CarrotsEasy and tastes good. Slice carrots diagonally about 1 inch thick. Cook, covered, in boiling salted water in saucepan for 15 minutes or just until tender.
Baked Yams and ChestnutsYummy every day or holiday dish. Cook yams in water to cover in saucepan until almost tender. Peel and slice. Drain and slice chestnuts. Peel, core and slice apples.
Yorkshire PuddingHeat oven to 400 degrees F. Sift flour and salt together into bowl. Add milk, mix thoroughly. Add eggs, well beaten. Gradually add water and beat until large bubbles appear.
Sweet and Sour Yams and PineappleCombine reserved juice, cornstarch, and salt in saucepan; blend well. Bring to a boil over medium heat; cook until thickened, stirring constantly. Stir in lemon juice.

Creamy Bacon Corn
Fry bacon; set aside. Drain all but 3 tablespoons drippings from skillet. Cook and stir green pepper and onions in drippings until onion is tender. Add remaining ingredients.
Mushroom Bread StuffingCan be used as a side dish with pork chops. Cut the bread into small 1/3-inch cubes. Spread out on two baking sheets and toast in a preheated oven at 350 degrees F. for 15 to 20 minutes. They will need frequent stirring, or air dry one full day prior to making stuffing.
New England Yam BakeDrain pineapple, reserving 1/4 cup syrup. line sides of 10x6 inch baking dish with pineapple slightly overlapping; arrange yams in center. Pour pineapple syrup over yams. Combine flour, brown sugar, cinnamon and salt.
Maple Sweet PotatoesSimmer syrup and butter in large skillet for 2 minutes. Add sweet potatoes. Cook over low heat, uncovered, 10 minutes. Turn potatoes frequently to glaze.
Hawaiian Black Bean & RiceThis is a Hawaiian Luau Dish. Combine the first 7 ingredients. Pour the dressing over it all. Toss to coat ingredients. If making ahead of time, wait until the day you serve it to add the dressing. Serve cold.
Southern Doughboys (Hush Puppies)In a deep fryer or heavy, deep skillet, heat 2 to 3 inches of oil over medium heat to 375 degrees F. In a mixing bowl, combine cornmeal mix, flour, and onion. Add milk and egg; mix well. Let stand for 5 minutes.
Yummy Yellow SquashPreheat oven to 350 degrees F. Wash and boil squash in water (no salt) until tender. Drain and mash. Mix ingredients all together except margarine and dressing. Melt margarine and mix with dressing. Put half dressing in bottom pan, then squash, then remaining dressing.
Squash CroquetsIn a large bowl, combine mashed squash, onion, thyme, basil, eggs, bread crumbs, salt and pepper. The mixture should be quite thick; add more bread crumbs if it isn't thick enough to form balls easily.
Sweet Potato PoneGrate potatoes. Cream butter and sugar. Add eggs which have been well beaten. Mix potatoes, spices, milk and salt. Beat well and pour into a well-buttered pan. Bake at 300 degrees F for about 1 hour.
Sausage and Pecan DressingBake cornbread according to package directions. Cool and crumble into a large bowl. Preheat oven to 375 degrees F (190 degrees C). Heat oil in a large skillet over medium-high heat. Cook sausage until brown and crumbly, remove from the skillet but keep the oil in the pan.
Sweet Potato Banana Bake This is a very good side dish with chicken. In a large bowl, combine all ingredients until smooth. Transfer to a 1-qt. baking dish coated with cooking spray.
Yams and ApricotArrange apricots over yams in 2 qt. casserole dish. Use apricot juice and enough water to make 1 cup juice. Put in saucepan and combine with remaining ingredients. Stir over low heat until mixture thickens.
Sauerkraut DressingFollow the directions to make the dressing, using real chicken broth and real butter. Mix in the undrained sauerkraut and sprinkle with sugar to cut the tartness of the kraut. Mix in the onions, celery, and sprinkle with sage to taste.
