Homemade Marinara Dipping in bowlA lot of store-bought and restaurant marinara dipping sauces have an unusual amount of extra ingredients and high levels of sugar. Make your own at home and control what you put in it. I wanted some marinara sauce today but I only diced tomatoes at the ready. I used a stevia sugar mix in place of the sugar. It did just the trick!

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 6 servings

Ingredients:

  • 1 tsp oil
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 can(14.5 oz) diced tomatoes
  • 1 tsp sugar
  • 1 tsp dried oregano
  • 1/4 tsp salt

Steps:

  1. Heat oil in a saucepan over medium heat. Add onion and garlic and cook for a few minutes until tender, stirring frequently.

  3. Mix in diced tomatoes, sugar, oregano and salt. Bring to a boil, then reduce heat to low. Simmer for 15 minutes.

  5. Use an emersion blender to puree the sauce until smooth, or transfer to a blender and pulse until all the chunks are gone. Serve with bread or cheese sticks.

When making spaghetti and/or marinara sauces, or other tomato sauces, I notice that carrots are part of the ingredients. What is the purpose of the carrots? How should they be introduced? Grated, pureed, etc? Is sugar also added when carrots are used?

I always add carrots, and I always make my sauces from scratch, including home canning my own tomatoes. I put clean and peeled carrot chunks in my blender, along with celery, onion, and a quart of tomatoes, and pulverize.

I set it in a pan to cook before proceeding with the sauce-making. Pureed carrots and celery add so much flavor and body to the sauce. And it's a great way to hide veggies.

In a large saucepan, with a small amount of olive oil, saute' the onion and green pepper, until the onion is translucent. Add the stewed tomatoes, tomato paste, tomato sauce, water, garlic, oregano, parsley and sugar.

Make "anything spaghetti sauce" with a blender. Throw in whatever leftovers you may have from other meals, with some tomato paste and seasonings. You get a very cheap marinara sauce, by pureeing the ingredients in a blender they can be added together to make a sauce.

This is great and fresh over cooked pasta or I use it for dipping sauce with mozzarella stix or fried eggplant or zucchini and more!
