baked pizzaUsing light and flaky Phyllo layers for the crust, this recipe makes an easy, fun and artisan looking pizza!

Yield: 12 squares

Ingredients:

Steps:

  1. Heat oven to 375 degrees F while unfolding a roll of refrigerated Phyllo dough.
  2. Butter pan, then add one layer of Phyllo down, brushing with melted butter (or coconut oil) and lightly sprinkling Parmesan cheese on all ten sheets of dough.

    NOTE: Keep a damp clean towel on the unbuttered stack of Phyllo sheets as you go. Bake for 12 minutes in oven. Let stack cool while you cut up your mozzarella, tomatoes and chop your basil.

  4. Arrange halved mozzarella balls, tomatoes, chopped basil and remaining Parmesan cheese evenly on sheet. Bake for 5 to 7 minutes or until cheese melts.

Coarsely dice chicken. Saute' onion, celery and garlic in 3 tablespoons butter, until tender. Add to chicken. Melt 4 tablespoons butter; add flour. Cook and stir over low heat. Whisk in chicken stock gradually.
