Here's a Mexican style dish we really like.

Ingredients

  • 1 cup Bisquick
  • 1/4 cup water
  • 1 can (16 oz) refried beans
  • 1 lb. ground beef, cooked and drained

  • 1 cup thick salsa
  • 1 1/2 cups shredded cheddar cheese

Directions

Grease a deep dish pie plate. Mix Bisquick, water and beans. Spread in pie plate.

Layer remaining ingredients on bean mixture.

Bake for 30 minutes at 375 degrees F.

Optional: Can serve with additional salsa, and/or sour cream, and hot sauce.

Burrito Bake II

This is a family favorite! I found it in a Wal-Mart employee cookbook several years ago. I shared this on www.recipezaar.com and it has 38 different people rate it highly!

Ingredients

  • 1 cup Bisquick
  • 1 can refried bean
  • 1/4 cup water
  • 1/2 lb. ground beef
  • 1 (16 ounce) jar taco sauce (not salsa)
  • 1 cup shredded cheddar cheese

Directions

In small mixing bowl mix Bisquick, water, and refried beans together. Spread in 8X8 inch baking dish.

Fry ground chuck until brown. Drain off any grease. Mix in taco sauce. Pour over "crust" mix. Sprinkle with cheese. Cover with foil. Bake at 375 degrees F for 25-30 minutes.

I use reduced fat bisquick, fat free refried beans, and lean ground beef (I fry up 80/20 ground beef, drain and rinse very well in hot water this will make the beef as lean as a 93% lean beef - I found this on a frugal website. I freeze it in 1/2 lb portions.)

This is good served with corn and a salad. I top my portions with all the taco fixings (lettuce, tomato, sour cream.)

Preheat the oven to 350 degrees F. In a large skillet, over medium heat, saute' the ground beef for 5 minutes and dd the onion and garlic. Saute' for an additional 5 minutes.

Preheat oven to 350 degrees F. Cook ground beef and onion over medium high heat until browned and drain if needed. Add garlic, chili powder, paprika, dried oregano, dried marjoram, salt, pepper, and cumin.

Different, but very good casserole dish. Brown ground beef and onion. Add refried beans and taco mix.

I have a lot of frozen chicken burritos, can I use them in a casserole dish? Recipes please.

Dear Brigid,
I make an inexpensive enchilada casserole with chili beans (homemade or canned), some sautéed onion, green chilies, corn tortillas (rolled around the beans or stacked like lasagna). Top with red or green chile sauce (homemade or canned again), cheese and bake.

I also make a baked burrito casserole the same way - except with whole-wheat flour tortillas.

I haven't done it with frozen burritos but you might try it with them. Layer them in your greased casserole dish (I use a cast iron skillet), pour your chile sauce over, top with cheese and bake. I think I'll try it with the chicken burritos tomorrow.

I was going to bake some chicken breast and I just happen to have a can of sloppy joe sauce on hand and dumped it on and baked it until the chicken was done and then added some cheese and let it melt and it was very good.I would think that it would work for burritoes too.I baked them at 350%

I would pour some cream of mushroom soup or cream of chicken soup over them and then top with cheese and bake, I would think this would be something like King Ranch casserole. Good luck and happy cooking

I use frozen beef burritos, i've never tried it with chicken but i bet it would be equally as good. I spray the bottom of a 9x13 baking pan with cooking spray, then i spread a thin layer of taco sauce down and place thefrozen burritos on top of that. I pour more taco sauce on top of the burritos then top with shredded cheese.

I usually just bake the casserole according to the package directions on the burrito package. They turn out wonderful, our whole family loves them. I'm the only one in the family that likes sour cream but I put a dollop of sour cream on top of my portion and it is delicious! Hope this helps.
