Poppy-seed CheesecakeWhen baking cheesecake in a spring form pan, turn the pan bottom upside down, so that the lip faces downward. This makes it easier to remove the entire cake or even just a slice because the cake server can be slid under the cake without interference from the lip.

My cheesecake recipe calls for cornstarch to thicken, not flour.

That I know of, there is no special flour for cheesecakes. Baking your own bread and things of that nature, there's where your speciality flours come in.

Since you mention your recipe calls for flour then by all means definitely use flour and many, many cheesecake recipes use "all-purpose flour".

Many cheesecakes I have had recipes for never use flour. Your thickeners can be anything from the cheese used to the kinds of sugar bases. My d-i-l make one with white chocolate chips, orange juice thickened with knox and the cheese.

Eagle brand's recipe is based on sweetened condensed milk. Condensed milk already has sugar in it:)

Condensed milk like Eagle brand is definitely different than canned carnation or u name it brand. Using condensed milk and the other ingredients called for may not be what you expect.

Use regular canned milk instead unless your recipe calls for eagle brand or similar sweetened condense milk.

I've used condensed milk for no bake cheesecake. Just remember you don't need to add extra sugar because condensed milk, unlike evaporated milk, is very sweet!
