Love Pasta Fagioli soup! It's what we always get at Olive Garden on the luncheon menu. All you can eat of salad, soup and breadsticks. Best lunch I can think of in the wintertime, and not too bad in the summer either for that matter.

I haven't been to Olive Garden in a really long time, Lee, and have never tried their Pasta Fagioli but I sure do love their all you can eat salad and usually ask for extra peperoncini in it. I just made the Fagioli again yesterday to give to a neighbor friend who helps me out a lot and added an extra cup of dittalini. It turned out like a great, thick pasta type stew. ;-)
I'm to the point where all I need to do is read the name of the recipe to know that it will be from Deeli. I know they all taste wonderful but I haven't the talent or the enthusiasm for cooking complicated things like that.

Heat olive oil in a saucepan over medium heat. Saute carrot, celery and onion until soft. Add garlic and saute briefly.
This a recipe that my MIL shared with me. It's her family's version of Pasta Fagioli. It's really inexpensive to make and tastes sooo good.
