This is an economical recipe for those who need an inexpensive meal. First put on water to boil for 16 oz package of macaroni. Put one cup of celery and one medium onion in food processor to cut up. Saute in olive oil until soft.
Years ago, my grandfather used to make a dish that he called "Fried Macaroni". All I can remember is that he used macaroni, wheat germ, and sugar. And it was fried, at least at the end of the recipe. Does anyone know of a recipe that sounds like this at all?
You can bake the mac and cheese in a flat pan. When cool, cut into squares, dip each square in beaten egg, then bread crumbs and the deep fry. That is how I do it. Hope that helps. Good luck.

After the macaroni was cooked, she put it in a frying pan with some oil, breadcrumbs and onions (and I guess whatever else you'd like) and fry it lightly till the breadcrumbs coated the macaroni.

Ingredients:
8 ounces medium or sharp cheddar cheese, grated
2 cups dry elbow macaroni, cooked and drained
1/2 teaspoon table salt
1/4 teaspoon black pepper
1/8 teaspoon paprika (optional)
3 large fresh eggs (room temperature), beaten
2 tablespoons butter, melted
1 tablespoon oil or bacon drippings
Directions:
Grate cheese of choice and set aside. Cook 2 cups dry elbow macaroni to al dente stage according to directions. Drain well in colander. Place in a large bowl. Season with salt, black pepper and paprika (optional). In a medium bowl, beat eggs briskly with a wire whisk until light and fluffy and pale yellow. In a large skillet over low heat, heat oil and butter together. Quickly mix together macaroni, grated cheese and beaten eggs. Add mixture to skillet and stir and fry until brown and crispy. Serve immediately.

The way my mother did Fried Macaroni is; cook macaroni drain then put in a skillet and after macaroni is hot pour some beaten egg over it and cook till egg is done. I still do left over macaroni this way.
A friend of mine feeds this to her kids who say it is one of their favourite meals. She'll make it when she doesn't have much time or doesn't feel like cooking.

You can do anything with macaroni.
On its own with olive oil and basil and oregano.
With a fresh seasonal veggie.
Sprinkle some fresh ground pepper and grated parmesan or romano on it.
Google "pasta primavera" for some nice veggie, springtime pasta dishes and use macaroni instead of whatever pasta the recipe calls for.

My family loves my "Italian Pasta Salad".
Pasta: Any kind, 1 box
Chicken: Anything leftover or boneless Chicken breast cooked in the microwave and cut into small chunks or small torn pieces.
Cucumber: Peeled and cut into small cubes.
Tomato: Whatever type you have on hand. Also cut into small cubes.
Black olives: Optional. Drained and sliced.
A small bottle of Italian Dressing: use enough to coat everything
Throw everything together in a bowl! Quick meal and great for picnics. Also, tastes great the next day.
Garlic powder, salt and pepper added to taste only if needed.

2 boxes of mac n cheese dinners
1 lb of ground hamburger or ground turkey
Make mac n cheese like box says. Brown your meat,add tomatoes. Mix all together in a casserole dish(13x9) and top with cheese. Bake at 350 just until bubbly and cheese is melted. 20 Mins or so
easy lasagna
1 lb of hamburger or ground turkey
2 boxes of mac n cheese
1 jar or can of spaghetti sauce
1 bag of mozzarella cheese
Brown meat.Add sauce.Make mac n cheese.Layer in a casserol dish the mac n cheese, sauce mixture and a layer of cheese, repeat. Bake at 350 until bubbly and cheese is melted.
macaroni salad.
1 Lb box of macaroni
1 jar of sandwich spread
1 onion cut up
1 bell pepper cut up
1 cucumber cut up
diced ham
2 tbl spoons of mayo
Make macaroni according to directions.When done drain,add sandwich spread and mayo. Mix well.Add onions, bell peppers, and cucumber and ham cubes. Mix well.Serve warm or chilled.
Mix all ingredients together in covered dish and bake at 350 degrees F for 30 minutes with lid and then 30 minutes without lid.
I have no idea why this is called "creole", since it is very mild. It's good, plain home cooking, which I consider some of the best. It's all in one pan, too.
