This is an excellent one-pan to one-dish meal that can serve a lot of people without too much effort. I recently had 6 people come over to my house after an event and they were hungry. I had a lot of snack items around, but I wanted to give them something more substantial. This was the perfect dish. Since it has layers of tortilla chips and cheese, baking it off turns it into a cross between tacos and enchiladas. I hope you try this one out!

Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Yield: 8 servings
Ingredients:
1 Tbsp cooking oil
1 lb ground beef
2 Tbsp chili powder
2 tsp ground cumin
1 tsp dried oregano
salt and pepper
1 medium onion, small diced
1/2 green bell pepper, small diced
4 cloves garlic, minced
1 can (15 oz) can black beans
1 can (15 oz) can corn kernels
2 cups salsa
5 cups tortilla chips
2 cups shredded cheese
any toppings you like (I used sour cream, olives, avocado, salsa)
Steps:
Preheat oven to 375 F. Heat oil over high heat in a large pan. Add beef, chili powder, cumin, oregano, and a good dash of salt and pepper. Cook, breaking up the clumps often for about 5 minutes.

Add the onions, peppers, and garlic. Cook for about 5 minutes, until onions and peppers are softened.
Add the corn, beans, and salsa. Mis well. If it starts going a bit dry, keep adding water by the tablespoon until moistened. Cook for about 5 minutes. Add salt and pepper to taste.
Lightly grease a 9x9 in. or similar sized baking dish. Lay half the tortilla chips on the bottom.

Spoon half the meat mixture on top of the chips.
Sprinkle half the cheese on the meat.
Repeat the layers again: chips, meat, and cheese.
Bake uncovered until the cheese melts and edges of exposed tortilla chips are browned, about 20 minutes.

Add your favourite toppings and serve with tortilla chips on the side.
Brown the ground beef. Add taco seasoning and cook according to directions. Place in 9 inch square pan. Mix cornbread according to package directions. Put on top of meat mixture.
Brown ground beef and drain. Add taco seasoning to ground beef, read package for the amount of water to add. Spoon a little of the taco juice in the bottom of a 9 X 13 glass casserole dish.
