Microwave Casserole Recipes

Microwave OvenAn inexpensive, hearty and tasty meat and potato dish. It is cooked completely in the microwave, so it is a time saver, too. I created this dish many years ago and my son, who was six at the time, named it.

Ingredients:

  • 6 medium potatoes
  • 2 Tbsp. olive oil
  • seasoning salt
  • 2 cups finely cubed turkey pastrami
  • 2 cups grated American cheese (Velveeta would be fine, too)
  • 1/2 cup sour cream or plain yogurt
  • 1/4 cup milk

Directions:

Peel or scrub the potatoes (I scrub them so that we can get the extra nutrition from the skins) and cut into chunks. Make sure the chunks are roughly the same shape and size for even cooking.

Put potatoes into a microwave safe casserole or bowl. Drizzle with olive oil and stir until potatoes are evenly coated. Season with seasoning salt to taste.

Cover and microwave on high until potatoes are fork tender, about 10-15 minutes, depending on the wattage of your microwave.

Add remaining ingredients and mix well. Microwave on high for about 5 more minutes, or until the mixture is heated through and the cheese begins to melt.

Servings: 6
Prep Time: 10 Minutes
Cooking Time: 20 Minutes

Source: Created through hard times when I had to use the least expensive ingredients I could find to feed a family of 6.

Easy, quick meal! Place margarine slices in 2 qt. glass baking dish. Layer remaining ingredients, 1/3 at a time, in prepared dish. Cover with plastic wrap. Microwave on high for 20 minutes.

Place ground beef in 1 1/2 qt. microwave casserole. Microwave for 4-5 minutes or until beef loses it's color, stirring after 2 minutes. Pour off drippings. Add next 3 ingredients, mixing well.

Melt butter for 30 seconds. Add onion and heat uncovered 3 minutes or until tender. Add chilies, tomato sauce and salt. Heat uncovered for 6 minutes.

Beat eggs and half and half and gradually add egg mixture to hot sauce mixture a little at a time.

Cut broccoli into small pieces, cut tomatoes in 1/2 and dice onion. In a bowl, melt butter, add onion and cook 2 minutes. Add broccoli and seasonings, cook 8 minutes. Stir. Add tomatoes, cook 1 minute.
